Made with bulgur and fresh vegetables, very nourishing and easy to make, this salad makes the perfect choice for healthy lunches.
You can serve this salad as a main dish or as a side dish with grilled meat.
Before getting to instructions, let me tell you about bulgur.
Bulgur is a nutty tasting grain made from whole wheat kernels that have been parboiled. it is most common in European, Middle Eastern and Indian Cuisine.
It is similar to rice and couscous but it has a higher nutritional value.
Bulgur can be used in pilafs, soups, bakery goods or as a stuffing. Being parboiled, it is very easy to prepare, all you have to do is place it in hot water and let it rest for 10-30 minutes.
Ingredients for bulgur salad:
– 150gr fine ground bulgur + 150-170ml hot water (see also the instructions from the package)
– 4 tomatoes
– 4-5 cucumbers
– 1 bell pepper
– 1 bunch spring onions
– 150gr pitted olives
– 150-200gr feta cheese
– 2 tablespoons olive oil
– salt to taste
– lemon juice or vinegar to taste
How to make bulgur salad
You should start by preparing the bulgur.
Bulgur is already partially cooked and all you have to do is to place it into a medium bowl, pour hot water over, cover with plastic wrap and let it rest for 10-30 minutes (depending on its size).
Meanwhile prepare the other ingredients.
Chop the vegetables into small pieces and place them into a large salad bowl. Season with salt.Add the bulgur and combine. Add olive oil and lemon juice (or vinegar) to taste.
Add diced feta cheese and combine.
Serve as a main dish or as a side dish with grilled meat or fish.
