Mashed white beans with caramelized onions

Mashed white beans with caramelized onions is a vegan dish very popular in Romania.  It’s very tasty and very easy to make.

In Romania we usually prepare this recipe with dried white beans but you can also use canned beans It will be even easier :).

If you choose to use dried white beans, you have to soak them in cold water over night. Beans will absorb water and they will be easier to cook.

Drain and rinse the beans and place them into a pot with just enough water to cover them. Cover the pot with a lid, bring to a boil and simmer until beans are almost tender.

Drain and rinse the beans, place them back into the pot and cover with water. Add salt, bay leaf and peeled carrot, bring back to a boil and cook until the beans are tender.

While cooking the beans for the second time, you have enough time to prepare the caramelized onions.



Ingredients for mashed white beans with caramelized onions:

– 500gr dried white beans (or 800gr-1kg canned beans)

– 1 large carrot

– 5 garlic cloves

– 1 bay leaf

– 2 tablespoons vegetable oil

– salt to taste

For caramelized onions:

– 3-4 onions

– 3 tablespoons tomato paste

– 1 bay leaf

– 300ml water ( or vegetable soup)

– 2 tablespoons vegetable oil

– salt and pepper to taste

How to make mashed white beans with caramelized onions

If you are using dried beans, you start by soaking it in cold water over night.

Rinse the beans and place them into a large pot. Cover with at least 4 times their volume of water and leave to soak over night.

 



Drain and rinse the beans and put them into a large pot. Add just enough water to cover them. Cover with a lid and bring to a boil.  Simmer until beans are almost tender.

Drain and rinse the beans and place them back into the pot.  Add just enough hot water to cover them.

Add salt, bay leaf and the peeled carrot.

Bring back to a boil and continue to cook until the beans are tender.

Remove from heat, drain the beans, saving some of the liquid. Allow to cool.

If you are using canned beans, skip these steps.

Meanwhile prepare the caramelized onions

Chop the onions julienne. Place the chopped onions into a skillet with 2 tablespoons of vegetable oil. Cook until the onions turn glossy. Add the tomato paste and stir to combine. Add 300ml water or vegetable soup, the bay leaf and stir to combine. Season with salt and pepper and cook until reduced.

Remove from heat. Set aside and allow to cool.

Using a potato masher, a stick mixer or a blender mash the beans and half of carrot. While mashing, add 2 tablespoons of vegetable oil and a bit of bean-cooking liquid, gradually, until achieving desired consistency.

Season with salt and pepper and add the crushed garlic.

Transfer mashed beans to a serving bowl.

Top the beans with caramelized onions.

Serve on a platter or spread on crusty bread.
