Chicken shawarma recipe

Shawarma is a very popular Middle Eastern street food. It’s a dish made with layers of meat (beef, lamb or chicken), tomatoes, onions, french fries, pickles and other goodies.
Shawarma can be served on a plate or as a sandwich or wrap.
In Romania is very popular chicken Shaorma with french fries, pickles, ketchup, mayonnaise and sometimes with tomatoes and onions.
Instead of mayonnaise you can use Tzatziki, made with Greek yogurt, pickles and garlic.

Ingredients for Chicken Shawarma recipe

– 3 pita breads
– 500gr boneless chicken breast
– 1.5kg potatoes
– 5-6 pickles
– ketchup
– mayonnaise
– 5-6 garlic cloves
– vegetable oil for frying the potatoes (500ml-1L, depending on your pot size)
For marinade:
– 4 tablespoons olive oil
– 1 lemon, juiced
– 2 garlic cloves
– 2 teaspoons dry oregano
– salt and pepper to taste

How to make Chicken Shawarma recipe

Start by preparing the marinade. Whisk together olive oil, lemon juice, 2 garlic cloves (crushed), oregano, salt and pepper.
Slice the chicken breast and place the slices into a medium bowl. Add the marinade and mix well. 
Cover with plastic wrap an put in the refrigerator for 4 to 6.
Peel the potatoes and cut them into sticks.
Heat vegetable oil in a heavy pot. In 2-3 batches, fry the potatoes until crisp and golden.
Remove the potatoes from oil and drain on paper towels.
Meanwhile grill the chicken. If you don’t have a grill, you can use a non stick-pan to fry the chicken on both sides.
Once cooked, shred the chicken thinly.
Before assembling Shawarma I warm a bit the pita bread. I Use a non-stick pan and warm pita bread on both sides for a few seconds.
How to assemble Shawarma
Mix the mayonnaise with crushed garlic. Set aside.
To keep Shawarma rolled tight, I use a piece of aluminum foil, half the size of pita bread.
Place a piece of aluminum foil on a platter. Place pita bread over it.
Spread 2-3 tablespoons of garlic mayo over the pita bread.
Over the mayonnaise spread pickles, sliced.
Add french fries and shredded chicken
Sprinkle with ketchup and, if you wish, more mayonnaise.
Roll the pita bread and use the foil to keep it rolled.
