Cocoa glaze recipe

Thick, rich, sticky, caramel flavored, this cocoa glaze is my favorite. It’s very easy to make with a handful of ingredients and you can use it for cookies, pancakes, donuts and cakes.
To prepare this delicious cocoa glaze you have to mix sugar and water and cook until the sugar melts. Add the butter and cocoa and continue to cook until thickens. You can adjust the cooking time. The more you cook the glaze, the thicker it will be. Don’t exaggerate though because while cooling, the glaze continues to thicken.
I used this delicious cocoa glaze for the Caramel layer cake and for the Vanilla layer crepes cake.


Ingredients for cocoa glaze recipe:

– 70 gr (1/3 cup) granulated sugar
– 40 ml (3 tablespoons) water
– 50 gr (3 tablespoons and 1 teaspoon) butter
– 2 tablespoons cocoa powder
– 8 gr (1 tablespoon) vanilla sugar (or 1 teaspoon vanilla extract)

How to make cocoa glaze

Place sugar and water into a small pan. Place the pan over medium heat and cook, stirring occasionally, until the sugar completely dissolves.
Remove from heat and add butter and cocoa powder. Stir to combine.
Bring back to a boil and cook for 4-5 minutes (or until thickens).
Remove from heat, add the vanilla sugar (or vanilla extract) and allow to cool a bit, but not completely.
The glaze must be thick but a bit fluid if you want to flow down on the cake.
