How to make zucchini salad, fried zucchini with yogurt, zucchini with yogurt and garlic
This zucchini salad with yogurt is a summer time cold delicacy. It’s very refreshing and flavored and it is usually served as a side dish.
Zucchini salad with yogurt is very similar with Tzatziki, (Greek salad with cucumbers and yogurt), but even tastier.
This delicious salad is made with fried zucchini, but you don’t have to worry about your diet because they aren’t fried in too much oil. You can also grill the zucchini.
To prepare zucchini salad you have to use Greek yogurt. You can also use a low fat yogurt but the salad will be more fluid.
You can serve the zucchini salad with yogurt with grilled meat or vegetables, with skewers or souvlaki.
If you cut zucchini into small pieces you will obtain a delicious zucchini spread.

Ingredients for zucchini salad with yogurt
– 2 zucchini (900gr)
– 500gr Greek yogurt
– 5-6 garlic cloves (or to taste)
– 2 tablespoons of vegetable oil
– 1 bunch of fresh dill
– salt and pepper to taste
– lemon juice to taste
You also need vegetable oil for frying the zucchini
How to make zucchini salad with yogurt
Wash the zucchini and cut them into 1cm thick slices.
Place the zucchini slices into a colander, sprinkle with salt and let rest for about 20-30 minutes. In this resting time zucchini will leave water.
Place 1-2 tablespoons of vegetable oil into a non stick skillet. Place the skillet over medium heat.
When the skillet is hot, add zucchini slices and fry them on both sides until golden brown. Work in batches. If necessary, add more oil.
Place fried zucchini onto a plate and allow to cool completely.
Cut the zucchini slices into smaller pieces (halves or quarters, depending on their sizes).
Place the chopped zucchini into a salad bowl.
Add the yogurt, crushed garlic, chopped dill, olive oil and lemon juice.
Season with salt and pepper and mix to combine.
You can serve zucchini salad with yogurt right after preparation but it’s tastier if you refrigerate it for 30 minutes – 1 hour before serving.
