Schnitzel in potato crust

This schnitzel in potato crust is, definitely, the best schnitzel. The meat is very tender and coated in a delicious crust, a bit sourish and very flavored.
To prepare this schnitzel in potato crust I used pork fillet but you can also use boneless pork chops or boneless chicken breast.
The crust is made with coarsely grated potatoes, eggs, sour cream, flour and garlic. It’s a bit sourish because of the sour cream and this goes perfectly with potatoes and garlic. But if you don’t like sour cream you can also use heavy cream or milk. In this case there might be necessary to adjust the quantity of flour.
Serve schnitzels in potato crust warm, with salad or your favorite side dish. They go well with rice, potatoes and homemade bread.

Ingredients for schnitzel in potato crust

– 600gr pork chops or fillet
– 3-4 potatoes
– 3 eggs
– 200gr sour cream
– 6-7 tablespoons flour
– 3-4 garlic cloves
– salt and pepper to taste
You also need:
– a few tablespoons of flour for the schnitzel
– vegetable oil to fry the schnitzel

How to make schnitzel in potato crust

Cut the meat into 1cm thick slices.
Take 1 slice of meat and pound it very well on both sides with a meat mallet.
Lightly sprinkle each side with salt and pepper. Cut into halves because it’s easier to work with smaller pieces of meat.
Repeat with the remaining meat slices. Set aside.
Peel the potatoes and coarsely grate them. Squeeze the potatoes and place them into a bowl.
Add lightly beaten eggs, sour cream, crushed or finely grated garlic and season with salt and pepper. Mix with a spoon to combine.
Add the flour and mix to combine. You must obtain a thick but fluid mixture. If necessary, add more flour.
Pour enough vegetable oil into a frying pan so that the schnitzel can “swim”. Place the frying pan over medium heat.
Place a few tablespoons of flour onto a plate.
Take 1 slice of meat and dip it into the flour, coating both sides.
Next dip the meat into the potato mixture, coating all sides.
Place the schnitzel into hot oil and fry on both sides until golden brown.
Remove from oil and place the schnitzel onto paper towels.
Repeat with the remaining schnitzels.
Transfer the schnitzels in potato crust onto serving plates. Serve with salad or with your favorite side dish.
