Try this zucchini and feta cheese salad for lunch or as a side dish!
This refreshing and delicious salad with zucchini and cheese is a delight not only in summer time, but also in any other season. It’s a delicious mixture of crispy vegetables and soft and sweet zucchini, topped with feta cheese.
This salad is made with fried zucchini but you don’t have to worry about your diet because you don’t have to use much oil for frying them. You can also grill the zucchini and in this case they will have a gorgeous smoke flavor :).
You should cook the zucchini without peeling them. The skin helps them to keep their shape. Otherwise, you will have a mushy zucchini mixture into your salad.
Like each time when you cook zucchini, after you slice them, you have to sprinkle with salt and allow to rest for about 30 minutes to leave water.
As regarding the vegetables, you can use your favorite vegetables. You can also add fresh herbs, eggs, ham, chicken or croutons.

Ingredients for the summer salad with zucchini and feta cheese
– 1kg zucchini
– 4-5 tomatoes
– 2 bell peppers
– 1 bunch of green onions
– 200-250gr feta cheese
– salt to taste
– 2 tablespoons of vegetable oil
– vinegar or lemon juice to taste
You also need a few tablespoons of vegetable oil for frying the zucchini.
How to make summer salad with zucchini and feta cheese
Wash the zucchini and slice them into 1cm thick slices. Place the sliced zucchini into a strainer, sprinkle with salt and allow to rest for about 30 minutes to leave water.
Place 1-2 tablespoons of vegetable oil into a non stick skillet. Place the skillet over medium heat.
When the skillet is hot, add zucchini slices and fry them on both sides until golden brown. Work in batches. If necessary, add more oil.
Place fried zucchini onto a plate and allow to cool completely.
Chop the green onions into rings, the white part and the green part also. Place the onion rings into a large salad bowl. Add the bell peppers chopped into small pieces, the sliced tomatoes and the feta cheese, diced.
Add the zucchini cut into smaller pieces (quarters or halves, depending on their sizes). Add vegetable oil and vinegar (or lemon juice) and mix to combine.
Taste the salad and add salt only if necessary (feta cheese and the fried zucchini already contain salt).
Serve with grilled meat.
