Chicken and zucchini meatballs

Tender, juicy, a little sweet and very flavored, these chicken and zucchini meatballs makes the perfect choice for lunch, for dinner or for party.
Chicken is not the best meat for meatballs because is drier and quite tasteless than other meats. This is why I mix chicken with different vegetables like mushrooms or zucchini. Chicken meatballs will be juicier and tastier.
These chicken and zucchini meatballs have a subtle zucchini flavor, they are juicier and tastier than plain chicken meatballs.
You can serve these delicious chicken and zucchini meatballs warm, with your favorite side dish. My favorite combo is meatballs and mashed potatoes. They go well also with baked potatoes and creamy mustard sauce, potato salad or rice salad. You can also serve them cold, as an appetizer or use them to prepare delicious sandwiches.
We served these meatballs with bulgur pilaf. This combo is a hit! 🙂

Ingredients for chicken and zucchini meatballs:

– 800gr ground chicken
– 600gr zucchini
– 1 egg
– 1 onion
– 5-6 garlic cloves
– 1 bunch fresh parsley
– salt and pepper to taste
– 1/2 teaspoon dried thyme
– 3-5 tablespoons bread crumbs
You also need:
– a few tablespoons of flour for shaping the meatballs
– vegetable oil for frying the meatballs



How to make chicken and zucchini meatballs

Rinse and grate the zucchini. Sprinkle with salt and allow to rest for 20-30 minutes to leave water.
Place the meat into a large bowl. Add the onion, finely grated and drained, the egg, crushed garlic and chopped parsley. Squeeze the zucchini and place it into the bowl. Season with salt, pepper and thyme and mix well to combine.
Add bread crumbs, spoon by spoon, until achieving the desired consistency.
Pour enough vegetable oil into a frying pan so that the meatballs can “swim”. Place the frying pan over medium heat.



Place a few tablespoons of flour onto a plate.
With slightly wet hands shape the meatballs. Roll each meatball through flour.
Place the meatballs into hot oil and fry the on all the sides until brown.
Remove the meatballs from oil and place them onto paper towels.
Serve the chicken zucchini meatballs warm, with your favorite side dish, or as an appetizer.
