These Moldavian meat patties (parjoale moldovenesti) are very popular in Romania. Their origins are in Moldavia, a region in the east of Romania.
Moldavian meat patties are long shaped patties, traditionally made from ground beef or ground pork (or a mixture of beef and pork). Ground meat is combined with potatoes, grated carrot, onion, garlic, bread and egg and seasoned with salt, pepper and dried thyme. Then the patties are shaped and rolled through a mixture of flour and bread crumbs and deep fried into hot oil. Moldavian meat patties can also be baked (I prefer this last version because is healthier)
You can serve Moldavian meat patties warm, with your favorite garnish. They go perfectly with mashed potatoes but you can also serve them with baked potatoes, rice or salad.

Ingredients for Moldavian meat patties (parjoale moldovenesti):

– 500gr ground meat (beef, pork or a mixture of beef and pork)
– 1 egg
– 1 potato (finely grated)
– 1 carrot (finely grated)
– 1 onion (or 2, if they are small)
– 5-6 garlic cloves
– 1-2 slices of bread (soaked and squeezed)
– salt, pepper and dried thyme to taste
For rolling the patties:
– 2 tablespoons of flour
– 2 tablespoons breadcrumbs
For greasing the baking tray:
– 1 tablespoon of vegetable oil

How to make Moldavian meat patties (parjoale moldovenesti):

Place the meat into a medium bowl. Set aside.
Soak the bread into milk or water. Squeeze it and place over the meat.
Peel the potato, the carrot and the onion and finely grate them. Squeeze them and place over the meat.
Add the crushed garlic and season with salt, pepper and dried thyme. Mix well with your hand.
Add the egg and mix to incorporate.
If you have time you can refrigerate this meat mixture for 30 minutes – 1 hour to allow flavors to combine. It’s not absolutely necessary and you can skip this step.
Use a plate to combine 2 tablespoons of flour and 2 tablespoons of bread crumbs.
With slightly wet hands form the patties, giving them a long shape. Roll the patties through the flour and bread crumbs mixture.

Place the patties into a greased baking tray.
Place the patties into preheated oven and bake at 200°C for 30 – 45 minutes (or until cooked through).
After 20 minutes remove the baking tray from the oven and turn the patties upside down. Place the baking tray back into the oven and continue to bake until cooked through.
Serve Moldavian meat patties warm, with your favorite garnish or with crusty bread.
