Very tasty and flavored, quick and easy to make, these spaghetti with chicken and green olives are my favorites. I love green olives because they are a little sour and I think they go perfectly with chicken and tomato sauce. Green olives give a sourish taste to this dish and you won’t obtain the same taste using black olives. But you can use both black and green olives.
You can also add capers to this green olives and tomato sauce. They are similar in taste with green olives and go well together.
Spaghetti with chicken and green olives are a quick and easy meal. While you are preparing the chicken with green olives and tomato sauce you can also cook the spaghetti. In 30 minutes you can set the table 🙂
You can serve spaghetti with chicken and green olives warm, for lunch or for dinner, garnished with fresh parsley. You can also sprinkle some cheese or Parmesan.

Ingredients for spaghetti with chicken and green olives:

– 350gr spaghetti
– 500gr boneless chicken breast
– 200gr pitted green olives
– 1 onion
– 3 tablespoons of tomato paste
– 500ml hot water (or chicken broth)
– 1-2 tablespoons of vegetable oil
– 1 bunch of fresh parsley
– salt and pepper to taste
Optional: capers

How to make spaghetti with chicken and green olives:

Finely chop the onions and place it into a skillet along with 1-2 tablespoons of vegetable oil. Cook, stirring often, until the onion turns glossy. Add the chicken cut into junks and continue to cook until the chicken changes color.
Add the tomato paste and 500ml hot water (or chicken broth) and stir to combine.
Add the green olives (and the capers, if you are using) and continue to cook until thickens a bit (for about 15 minutes).
Remove from heat and add chopped parsley.
Meanwhile, fill a large stockpot with water, add salt and bring to a boil. Add the spaghetti and cook, stirring often, until cooked through (see the instructions from the package).
Drain the spaghetti into a colander. Add the spaghetti to the sauce and stir to combine.
Serve immediately, garnished with fresh parsley. If you wish, you can sprinkle some cheese or Parmesan.
