This baked polenta layered with sausages, feta cheese and sour cream is a delicious and comforting meal, excellent for a family dinner. It’s also easy to make, with a handful of ingredients.
You prepare a medium-hard polenta, then you place one layer of polenta into a slightly greased baking dish. Over the polenta layer you place sausages and over the sausages spread feta cheese mixed with sour cream.
Place the second layer of polenta and cover with a mixture made from sour cream, feta cheese and 1 egg.
Then place the baking dish into the preheated oven and bake at 180ºC for about 25 minutes.

Ingredients for baked polenta layered with sausages, feta cheese and sour cream (19cm baking dish)

For polenta:
– 250gr cornmeal
– 1l water
– salt
For the middle layer
– 250-300gr smoked sausages
– 125gr feta cheese
– 3 tablespoons of sour cream (seasoned with pepper and salt only if necessary)
For topping
– 1 egg
– 125gr feta cheese
– 3 tablespoons of sour cream (seasoned with pepper and salt only if necessary)

How to make baked polenta layered with sausages, feta cheese and sour cream

Grate the feta cheese. Set aside.
Slice the sausages and place them into a non-stick skillet. Fry the sausages on both sides until slightly crispy and brown.
Remove from heat and set aside.

In a heavy large saucepan pour 1l of water. Place over medium heat, add salt and gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens, stirring often. Remove from heat.
Butter a 19 cm baking dish. Pour in half of the quantity of polenta.

Over polenta place sausages.
Use a small bowl to combine 125gr feta cheese and 3 tablespoons of sour cream. Season with pepper. Add salt only if necessary. Spread this mixture over the sausages.
Pour over the rest of polenta.
Use a small bowl to combine 125gr feta cheese, 1 egg (slightly beaten) and 3 tablespoons of sour cream. Season with pepper. Add salt only if necessary.
Spread this mixture over the last layer of polenta.
Place the baking dish into the preheated oven and bake at 180ºC for about 25 minutes.
Serve this delicious baked polenta layered with sausages, feta cheese and sour cream while is still hot.
Enjoy!
NOTE: While is hot, you won’t be able to cut this baked polenta very nicely.  I cut it when it was completely cold.
