Potato salad with pickled herring, how to make potato salad with pickled herring, potato salad with pickled herring, beetroot and mayonnaise
I love potato salad and I’m always happy to test new combos. There are so many possibilities to prepare potato salad.
This time I made a potato salad with beetroot, pickles, onions and pickled herring. And of course, there’s mayonnaise! :). If you want to obtain a delicious potato salad you must add mayonnaise. It doesn’t have to be classic mayonnaise made with tons of oil and egg yolks which is not so good for your health. You can use only 2-3 tablespoons of mayonnaise and mix it with yogurt.
Instead of mayonnaise I prepare a sauce made from 1 potato (boiled and peeled), juice from 1/4 lemon, 280gr yogurt, 1 egg yolk (hard boiled), 1 tablespoon mustard, 2 tablespoons vegetable oil, salt and pepper. I mix all the ingredients together until creamy. It’s very easy to make and healthier than classic mayonnaise.
Ingredients for potato salad with pickled herring:
– 1.2 kg potatoes
– 400gr pickled herring
– 1 beetroot (200-300gr)
– 1 onion
– 3 pickles
– 400gr mayonnaise
– salt to taste (if necessary)
How to make potato salad with pickled herring.
You should start by cooking the potatoes.
Wash the potatoes and place them into a large pot with water and salt. Cover with a lid, place the pot over medium heat and bring to a boil. Cook until the potatoes are tender when pierced with a fork.
Drain the potatoes and allow to cool.
Use a separate pot for cooking the beetroot. If you place it into the same pot with potatoes, you will obtain pink potatoes.
So, place the beetroot into a pot with water and salt. Cover with a lid, place the pot over medium heat and bring to a boil. Cook until the beetroot is tender when pierced with a fork. Drain and allow to cool.
Meanwhile chop the pickled herring into bite sized pieces. Chop the pickles into small pieces. Set aside.
Peel and dice the potatoes. Place them into a large salad bowl.
Add peeled and diced beetroot.
Add finely chopped onion, pickled herring and pickles.
Add mayonnaise and stir to combine.
Taste the salad and add salt only if it is necessary.
You can serve this delicious potato salad with pickled herring right after preparation or you can refrigerate it for 30 minutes – 1 hour before serving.
