This zucchini salad with mayonnaise is absolutely delicious and flavorful and you can serve it as a snack or as an appetizer. It is made from fried zucchini, mayonnaise and onions or garlic.
We couldn’t agree if to use onions or garlic, so I divided the zucchini salad into 2 bowls: I added garlic into one bowl and onion into the other :). I liked more the zucchini salad with mayonnaise and onion but my husband preferred the garlic version. If you choose the garlic version, add also some fresh dill because it goes perfectly.
As regarding the mayonnaise, you can use homemade mayonnaise or store bought mayonnaise. In both cases I recommend you to combine the mayonnaise with yogurt because is healthier.
Zucchini contain much water and you have to slice them, place them into a strainer, sprinkle some salt and allow to rest for 20-30 minutes to leave water. Then you can fry zucchini into a skillet with a bit of vegetable oil or you can grill them.
Leave zucchini to completely cool then chop them into small pieces. Zucchini continue to leave water and you have to place them into a strainer and let to rest for another 15 minutes. Then you can add mayonnaise and garlic or onion.
After preparation, you should refrigerate the salad for about 30 minutes before serving to allow flavors to combine.
You can serve this delicious zucchini salad with mayonnaise spread on crusty bread. It’s absolutely delicious!
Ingredients for zucchini salad with mayonnaise
– 1.5kg zucchini
– 400ml mayonnaise
– 140gr yogurt
– salt to taste
– 3-5 garlic cloves or 1 onion
– 1/2 bunch fresh dill
– lemon juice to taste
How to make zucchini salad with mayonnaise
Rinse and cut the zucchini into 1cm thick slices. Place them into a strainer, sprinkle with salt and let to rest for 20-30 minutes to leave water.
Place the zucchini into a skillet with a bit of vegetable oil. Place the skillet over medium heat and fry the zucchini on both sides until brown spots appear. Work in batches.
Transfer to a plate and allow to completely cool.
Chop the fried zucchini into small pieces and place them into a strainer. Let to rest for another 15 minutes.
Transfer to a salad bowl.
Add mayonnaise and yogurt and stir to combine.
Then you can add crushed garlic and chopped dill or finely chopped onion. Stir to combine.
Season with salt and, if you wish, add some freshly squeezed lemon juice.
Place the salad into the refrigerator for about 30 minutes before serving
