This celery root salad with chicken and mayonnaise is surprisingly tasty and easy to make with only a handful of budget friendly ingredients. I was really surprised how good this salad can be.
You all know that celery root has a strong flavor and although this salad contain a large amount of celery root, flavors combine perfectly and the result is an absolutely delicious salad.
Cook the chicken breast in salted water and add also some black peppercorns and 1 bay leaf. The chicken will much more tasty! You can also fry the chicken into a skillet with a bit of vegetable oil.
As regarding the mayonnaise, you can use homemade mayonnaise or store bought mayonnaise. If you want a lighter salad dressing you can combine mayonnaise with yogurt. I always do that! 🙂
You can serve this delicious celery root salad with chicken and mayonnaise with crusty bread, as a snack or as an appetizer.
– 600gr celery root
– 1 boneless chicken breast (600gr)
– 150gr dill pickles
– 400ml mayonnaise
– 150gr yogurt
– salt to taste
– juice from 1/2 lemon
– some peppercorns
– 1 bay leaf
Rinse and cut the chicken into junks. Place the chicken into a soup pot and cover with water. Add salt, some peppercorns (about a teaspoon) and 1 bay leaf.
Place the pot over medium heat and cook until the chicken is cooked through.
Drain the chicken, transfer to a plate and allow to cool.
Chop the chicken into small pieces. Place the chopped chicken into a salad bowl.
Chop the dill pickles into small pieces. Toss into the salad bowl.
Peel and grate the celery root. Drizzle with lemon juice.
Toss the celery root into the salad bowl.
Add mayonnaise and yogurt and stir to combine.
Taste the salad and add salt only if necessary.
Place celery root salad with chicken and mayonnaise into the refrigerator for 30 minutes – 1 hour before serving.
Serve this delicious salad with crusty bread, as a snack or as an appetizer.
