Very tasty, flavorful and refreshing, Tabbouleh salad became one of my favorite salads. It’s also very easy to make and you really have to give it a try!
Tabbouleh salad is a Lebanese vegetarian dish made with tomatoes, parsley, mint, bulgur, onion and, sometimes, cucumber. It is seasoned with salt, olive oil and freshly squeezed lemon juice.
Bulgur is a nutty tasting grain made from whole wheat kernels that have been parboiled.
It is similar to rice and couscous but it has a higher nutritional value.
Being parboiled, it is very easy to prepare, all you have to do is place it in hot water and let it rest for about minutes.
To prepare Tabbouleh salad you have to use fine bulgur. If you can’t find, you can replace it with couscous, which is very similar.
Traditionally, Tabbouleh salad it is served as an appetizer or as a snack. You can consider it as well a side dish and serve it along with grilled or roasted meats.
– 2 bunches of fresh parsley (if you love parsley, you can use 3 bunches)
– 1 bunch fresh mint
– 2 tomatoes
– 2 cucumbers
– 1 bunch green onions
– 80 gr fine bulgur + 100-120 ml hot water (or follow the instructions from the package)
– 1/2- 1 lemon, squeezed (to taste)
– 2 tablespoons olive oil
– salt to taste
You should start by preparing the bulgur.
Place it into a medium bowl, pour hot water over it and let it rest for about 10 minutes. Fluff up the bulgur with a fork and set aside.
Meanwhile prepare the other ingredients.
Finely chop the tomatoes. Place them into a colander to drain excess juice.
Rinse and drain the herbs. Set aside.
Finely chop the green onions and the cucumbers and place them into a salad bowl
Add finely chopped herbs (parsley and mint).
Add the tomatoes and the bulgur.
Season with salt, olive oil and lemon juice. Stir well to combine.
Refrigerate Tabbouleh salad for about 30 minutes before serving
