Feta cheese stuffed zucchini boats

Incredibly tender and flavorful, stuffed with feta cheese and topped with cherry tomatoes, these zucchini are a summer delight.
Feta cheese stuffed zucchini are also easy to make and I think the most “difficult” part is to scoop out the center pulp :). Reserve the pulp because you are going to use it to prepare the filling.
Beside the zucchini pulp, the filling is made from feta cheese, onion, carrot, eggs and fresh dill. I also added about 20 gr of semolina to thicken the filling. I seasoned the filling with salt and pepper but you can also add paprika, dried oregano or dried thyme, mint or parsley.
You may serve these delicious feta cheese stuffed zucchini as an appetizer or as a main dish along with your favorite salad.

Ingredients for feta cheese stuffed zucchini boats:

– 4 medium zucchini (1.2-1.3 kg)
– 350 gr feta cheese
– 2 eggs
– 1 onion
– 1 carrot
– 20 gr semolina
– 1 bunch of fresh dill
– 20-30 ml vegetable oil
– salt and pepper to taste
– a few cherry tomatoes

How to make feta cheese stuffed zucchini boats

Wash the zucchini and trim the stem end. Cut each zucchini into halves, lengthwise. Use a small and sharp knife to cut around the center of the zucchini, leaving about 0.5 cm on the edges. Then use a teaspoon to scoop out the center pulp. Leave about 0.5 cm on the bottom and on the edges. Reserve the pulp. Cut the pulp into smaller pieces and set aside.

Finely chop the onion and place it into a skillet along with 20-30 ml vegetable oil. Cook, stirring often, until glossy. Add coarsely grated carrot and continue to cook for about 1-2 minutes.
Add the zucchini pulp and continue to cook until soft and reduced. Season with salt and pepper and allow to cool.
Place coarsely grated feta cheese into a large bowl. Add chopped dill and the vegetables. Stir to combine.
Add the eggs and combine. Add about 20 gr of semolina and stir to combine.
Place the zucchini halves into a baking dish lined with parchment paper. Fill the zucchini with the feta cheese and vegetables mixture and place on top cherry tomatoes slices.
Place the feta cheese stuffed zucchini into the preheated oven and bake at 180 °C for about 30 minutes.
Serve these delicious feta cheese stuffed zucchini warm or cold, as an appetizer or as a main dish along with your favorite salad.
