Tender zucchini stuffed with juicy meat, topped with cheese and baked to perfection make the perfect dinner! I love these meat stuffed zucchini boats. They are absolutely delicious and easy to make with a handful of ingredients.
I used ground pork for filling but you can also use ground beef, chicken or turkey.
You may serve these delicious meat stuffed zucchini boats warm, for lunch or for dinner, topped with sour cream. Yummy!

Ingredients for meat stuffed zucchini boats:
– 4 medium zucchini (1.2-1.3 kg)
– 600 gr ground pork (or beef/ chicken/ turkey)
– 50 gr tomato paste
– 1 onion
– 3 garlic cloves
– 1 bunch of fresh parsley
– 30-40 ml vegetable oil
– salt, pepper and dried thyme, to taste
– 150 gr grated cheese to sprinkle
How to make meat stuffed zucchini boats:
Finely chop the onion and place it into a skillet along with 20-30 ml vegetable oil. Cook, stirring often, until glossy.
Add ground pork and season with salt, pepper and dried thyme. Cook, stirring occasionally, until the meat changes color. Add the tomato paste and crushed garlic and stir to combine. Continue to cook until cooked through and reduced. Remove from heat and add chopped parsley.
Meanwhile prepare the zucchini.
Rinse the zucchini and trim the stem end. Cut each zucchini into halves, lengthwise. Use a small and sharp knife to cut around the center of the zucchini, leaving about 0.5 cm on the edges. Then use a teaspoon to scoop out the center pulp. Leave about 0.5 cm on the bottom and on the edges. Reserve the pulp. If necessary, cut the pulp into smaller pieces.
Place the zucchini pulp into a pan along with about 10 ml of vegetable oil. Place the pan over medium heat and cook, stirring occasionally, until cooked through and reduced. Remove from heat and season with salt and pepper.
Combine the zucchini pulp and the meat.
Place the zucchini boats into a baking dish lined with parchment paper.
Use a tablespoon to fill the zucchini boats with the meat mixture. Sprinkle grated cheese.
Place meat stuffed zucchini boats into the preheated oven and bake at 180 °C for about 25-30 minutes.
Serve these delicious meat stuffed zucchini boats warm, topped with sour cream or along with your favorite salad.
