Delicious, airy, light and fluffy, flavored and topped with garlic, herbs, olive oil and tomatoes… Yum! This gorgeous tomato and garlic focaccia is more than just bread; it’s more like a pizza J. Actually, focaccia dough it’s also used for pizza. So, save this recipe because you can use it in many delicious ways.
Tomato and garlic focaccia is also easy to make with just a few ingredients that you can always find in your kitchen.
You can serve tomato and garlic focaccia as a table bread, as a snack, as an appetizer or you can use it to make delicious sandwiches.
I used a 25/35cm baking tray.
– 450gr (3 and 1/2 cups and 2 tablespoons) flour
– 250ml (1 cup and 1 tablespoon) warm water
– 1 sachet dried yeast (7gr/ 0.24 oz)
– 1 teaspoon sugar
– 1 teaspoon salt
– 30 ml ( 2 tablespoons) olive oil
– 30 ml (2 tablespoons) olive oil
– 5 garlic cloves
– 1 teaspoon dried oregano
– 1-2 tomatoes
– sea salt
In a medium bowl stir together flour and dried yeast. Set aside.
In a separate bowl pour 250ml (1 cup and 1 tablespoon) warm water and 3 tablespoons olive oil. Add 1 teaspoon sugar and 1 teaspoon salt and whisk.
Pour the flour with dried yeast, gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, start kneading by hand. Knead until the whole flour is completely incorporated.
Place the dough in a lightly oiled bowl. Cover the bowl with plastic wrap and leave to rest and rise in a warm place for 45 minutes – 1 hour (or until doubled in volume).
To prepare the topping, stir together 3 tablespoons olive oil and 5 garlic cloves finely chopped. Set aside.
Place the risen dough in a lightly oiled 25/35cm (9.84/13.7 inches) baking tray.
Press and stretch the dough with your hands all over the baking sheet. Poke the dough with your fingers to make little holes. Let the dough rest and rise for 20 minutes.
Drizzle the dough with the olive oil and garlic mixture. Spread over tomato slices and sprinkle sea salt and oregano.
Place focaccia into the preheated oven (at 200ºC/ 392ºF). Bake for 30 minutes or until golden and cooked through.
