Greek lemon potatoes

Very soft and tender on the inside but a little crispy on the outside, full of Mediterranean flavors, these Greek lemon potatoes are the best roasted potatoes. And you have to trust me because I’ve tested many recipes! :).
But why are these Greek lemon potatoes so incredibly delicious? Because they are soaked into a delicious sauce, like a marinade, and baked to perfection. The sauce is made from lemon juice, olive oil and water and seasoned with garlic, salt, pepper and dried oregano. It’s a symphony of flavors!
The Greek lemon potatoes are absolutely delicious and flavorful but I have to tell you that they need more salt than other roasted potatoes. The salt counterbalance the sourish taste of lemons. So, if you taste the potatoes and you think they are too sour, just sprinkle some salt and you’ll see how delicious these Greek potatoes can be 🙂
You may serve these Greek lemon potatoes along with grilled or roasted meats or with meatballs. I recommend you roasted chicken with white wine and garlic, Keftedes – Greek meatballs, Bifteki – Greek patties, Chicken and zucchini meatballs.

Ingredients for Greek lemon potatoes (for a 25/35 baking dish)

– 1.5-1.8 kg potatoes
– 100 ml olive oil
– 100 ml freshly squeezed lemon juice
– 200 ml water
– 3 garlic cloves
– 1 tablespoon dried oregano
– salt and pepper to taste

How to make Greek lemon potatoes

Use a small bowl to combine water, olive oil, lemon juice, crushed garlic, dried oregano, salt and pepper. Set aside.
Peel and rinse the potatoes. Cut the potatoes into wedges and place them into a 25/35 cm baking dish. Place the potatoes in a single layer.
Pour the lemon mixture over the potatoes.
Place the potatoes into the preheated oven and bake at 200º C for about 40 minutes.
After 40 minutes, remove the potatoes from the oven and using a wooden spoon or spatula, stir and turn them upside down to brown evenly.
Place the potatoes back into the oven and continue to bake for another 30-40 minutes.
Serve these delicious Greek lemon potatoes warm or at room temperature, along with grilled or roasted meats.
