Soft and buttery, vanilla flavored or a little bit salty, these homemade caramels are a real treat!
Homemade caramels are much more tasty than commercial ones and incredibly easy to make. And you don’t need a candy thermometer or any other special instruments. Or skills :). You need only 3 ingredients (or 4, if you decide to add vanilla sugar or salt).
To prepare these delicious homemade caramels you have to start by melting the sugar. Then add the butter and the heavy cream and cook until thickens and reduced. It’s like a caramel sauce but cooked a little bit longer. If you like, you can also add nuts or seeds.
Caramel must be poured hot into a buttered dish and refrigerated until firm.
Ingredients for homemade caramels
– 250 gr granulated sugar
– 100 gr soft butter
– 250 ml heavy cream
– 1\2 teaspoon salt or replace 20 gr granulated sugar with 20 gr vanilla sugar
How to make homemade caramels:
Place granulated sugar into a heat proof pan. Place the pan over low-medium heat and cook, stirring often, until the sugar is completely melted.
Remove from heat and add the soft butter, diced. Stir to combine.
Pour the heavy cream and stir.
If you want to use, now is the moment to add salt or vanilla sugar.
Place the pan over low-medium heat and bring to a boil. Continue to cook for about 16-18 minutes. You must obtain a thick, bubbling mixture. Remove from heat and pour the caramel into a buttered dish.
Place the caramel into the refrigerator for a few hours. Remove from the refrigerator and cut into squares. Keep homemade caramels into the refrigerator.
