Pretzel buns (Laugenbrot)

Chewy and little crispy on the outside and incredible soft and fluffy on the inside, these pretzel buns (Laugenbrot) are the easier version of pretzels J The same dough and the same taste, without braiding pretzels.
Pretzel buns (Laugenbrot) are a baked specialty in Germany , Austria and Switzerland . They are made of bread dough and the special part is that the buns are boiled for a few seconds in a baking soda and water solution before baking. The same method it’s used for pretzels and that’s why these buns are called “pretzel buns”.
Pretzel buns are easy to make and very tasty. You can serve these pretzel buns as a snack, as table bread or you can use them to prepare delicious sandwiches.
Pretzel buns (Laugenbrot)

Ingredients for Pretzel buns (Laugenbrot)

         450gr bread flour
         250ml lukewarm water
         50ml olive oil
         7gr dried yeast
         1 teaspoon salt
         1 teaspoon sugar
For the baking soda bath:
         2L water
         40gr baking soda
         1 tablespoon salt
To sprinkle: coarse salt, poppy seeds,  sesame seeds

How to make Pretzel buns (Laugenbrot)

Whisk together flour and dried yeast.
Place in a large bowl 1 teaspoon sugar, 1 teaspoon salt, vegetable oil and lukewarm water. Add the flour combined with dried yeast, gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, start kneading by hand until the whole flour is incorporated.
Place the dough in a lightly oiled bowl, Cover with plastic wrap and leave rise 45 minutes – 1 hour (or until double in volume).
When the dough is ready to use bring the water, salt and baking soda to a boil in a large pan.
Place the risen dough onto the lightly oiled working surface. Divide the dough into 10 equal pieces and shape each piece into a ball.

Place 5 balls into the boiling water and boil for 40 seconds. Turn the buns on the other side after 20 seconds.
Use a slotted spoon to remove the buns from the boiling water. Place the pretzel buns onto a non-stick baking tray (or any tray lined with parchment paper).
Repeat with the remaining 5 buns.
Using a very sharp knife, make 2 slits on the top of each bun.
Sprinkle each bun with coarse salt and poppy seeds.
Place the pretzel buns in the preheated oven and bake at 210ºC for 15-20 minutes or until golden brown.
Serve these delicious pretzel buns warm, as a snack, or use them to make your favorite sandwich.
