Cheesy soft pretzels

My children ask for pretzels almost every day. We buy pretzels very often from a pastry shop close to our home but nothing compares to homemade pretzels, right? So, when I have some free time, I prefer to prepare myself pretzels for my children.
Because I found some cheese leftovers in the refrigerator, I decided do try something different: cheesy soft pretzels.
These cheesy soft pretzels are a little bit different than traditional German pretzels. They are flavorful and  softer even on the outside because I replaced the baking soda bath with egg wash.
The cheesy soft pretzel are also easy to make. You have to prepare a dough, allow to rise, then you have to incorporate grated cheese. Shaping pretzels is also quite easy and you can ask your children for help 🙂
As regarding the cheese, you can use your favorite cheese. I recommend you a medium-hard cheese because is going to melt.
You should also try raisin pretzels and sunflower seed soft pretzels.

Ingredients for cheesy soft pretzels:

– 450gr (3 2/3 cups) flour
– 250 ml (1 cup and 2 teaspoons) lukewarm water
– 30 ml (2 tablespoons) vegetable oil
– 12.5 gr (1 tablespoon) fresh yeast
– 1 teaspoon salt
– 1 teaspoon sugar
– 200 gr (7.05 oz) grated cheese
For the egg wash: 1 egg beaten with 1 tablespoon of water or milk
To sprinkle: coarse salt and poppy seeds



How to make cheesy soft pretzels:

Use a small bowl (or a cup) to mix together fresh yeast and 1 teaspoon of sugar. Mix until the yeast turns fluid. Set aside.
Pour 250 ml lukewarm water into a large bowl. Add 30 ml vegetable oil and 1 teaspoon of salt.
Add the fresh yeast (fluid) and stir to combine.
Add the flour, gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, continue to knead until the whole flour is incorporated. You should obtain a smooth and non-stick dough. If the dough is too sticky, you can add a little more flour (about 25 gr).
Place the dough into a lightly oiled bowl, cover with plastic wrap and allow to rise for about 45 minutes – 1 hour (or until double in size).
Place the risen dough onto lightly oiled working surface, flatten a little with your palms and place the grated cheese on top. Fold the dough over the cheese and knead until the cheese is evenly incorporated into the dough.



Place the dough back into the bowl, cover with plastic wrap and let it rest for about 15-20 minutes.
Place the dough onto the lightly oiled working surface. Divide the dough into 10 equal pieces.
Shape each piece into a rope of 40 cm length, then shape the pretzels: bring the two ends together, overlap them, twist and bring back over the main body.
Place the pretzels into a lightly oiled baking tray. Brush the pretzels with egg wash and sprinkle coarse salt and poppy seeds.
Place the pretzels into the preheated oven and bake at 200ºC for 20 minutes or until golden brown.
Serve these delicious cheesy soft pretzels warm or cold, as a snack.
