Meat stuffed potatoes, topped with cheese and a bowl of salad. This is my favorite dinner! Once you’ve tasted them, I’m sure you’ll love them.
Meat stuffed potatoes are very tasty and filling and they go perfectly with salad, for lunch or for dinner.
They are also easy to make and you can use your favorite meat or you can use a combination of meat and vegetables.
Though you have to be carefully to not boil too much the potatoes otherwise it will be difficult to scoop them without breaking them.
Ingredients for meat stuffed potatoes:
–4-5 potatoes (1-1.2kg)
–500gr ground meat
–1 bunch of fresh parsley
–4 garlic cloves
–1-2 tablespoons vegetable oil
–½ teaspoon dried thyme
–salt and pepper to taste
Optional: 1 teaspoon ground cumin (if you use pork)
For topping: 150gr grated cheese
How to make meat stuffed potatoes
Wash the potatoes and place them in a saucepan with water and salt. Cover the saucepan and bring to a boil.
Simmer until the potatoes are tender when pierced with a fork.
Drain the potatoes and allow to cool.
Meanwhile prepare the stuffing.
Finely chop the onions and place it into a skillet with 1-2 tablespoons vegetable oil. Cook, stirring often, until the onions turns glossy.
Add the meat and season with salt, pepper, thyme and cumin (if you use). Continue to cook, stirring occasionally, until the meat changes color. A few minutes before removing from heat, add the crushed garlic. Set aside.
Cut each potato in half, lengthwise. Gently scoop out the flesh, leaving about 1/2cm on the edges. You will obtain a potato shell.
Place the potato shells into a baking tray. Set aside.
Place the scooped flesh into a bowl, season with salt and pepper and mash it.
Place the mashed potatoes over the meat, add chopped parsley and stir to combine.
Fill the potato shells with this meat and potatoes mixture. Top with grated cheese.
Place the baking tray into the preheated oven and bake at 180ºC for 25-30 minutes.
Serve warm with your favorite salad.
