These chicken meatballs with mushrooms are one of the best chicken meatballs recipes. They are very tasty, juicy and full of flavor.
Chicken meatball can be a little too dry because they contain a small percentage of fat. But, by adding mushrooms the chicken meatballs will be more tasty and juicy without adding more fat.
If you choose to bake these chicken meatballs with mushrooms brush them with olive oil before baking. Otherwise they will be too dry.
I choose to deep-fry the meatballs because they taste better 🙂
You can serve these delicious chicken meatballs with mushrooms with your favorite garnish or salad or as an appetizer.
Ingredients for chicken meatballs with mushrooms:
– 500gr minced chicken
– 500gr fresh button mushrooms
– 1 egg
– 1 onions
– 4-5 garlic cloves
– 1 bunch of fresh dill
– 1-2 slices of bread soaked in water or milk and squeezed
– 1-2 tablespoons of bread crumbs
– 1 teaspoon of dried thyme
– salt and pepper to taste
You also need:
– flour to shape the meatballs
– 1-2 tablespoons vegetable oil to cook the onions
– vegetable oil to fry the meatballs
How to make chicken meatballs with mushrooms:
First, you have to prepare the mushrooms. They contain a big amount of water and must be cooked before being added to the other ingredients.
Wash and finely chop the mushrooms. Place them into a skillet with 2 tablespoons of vegetable oil. Season with salt and pepper and cook until the water left by mushrooms completely evaporates. Set aside and allow to cool.
Place in a bowl the minced chicken, 2 slices of bread soaked in water (or milk) and squeezed, 1 egg, grated and squeezed onions, smashed garlic and chopped dill. Season with salt, pepper and dried thyme. Mix well with your hand.
Add the mushrooms and mix until combined.
Add 1-2 tablespoons of bread crumbs to thicken the mixture. Mix until combined.
With slightly wet hands form the meatballs. Roll them through flour.
Pour vegetable oil into a skillet. Place the skillet over heat and wait until the oil turns hot.
To check the oil temperature toss in 1 meatball. If the temperature is right it should make bubbles. If not, wait for a few seconds.
Gently drop each meatball into the hot oil. Fry them on both sides until brown.
Use a slotted spoon to remove the meatballs from oil. Drop them onto a paper towel to absorb the excess oil.
Repeat with the remaining meatballs.
Serve these delicious chicken meatballs with mushrooms with salad, rice, potatoes or your favorite garnish. You can also serve them as an appetizer.
