Feta cheese and olives sticks

Cheesy, a little crispy, very tasty and, as a plus, loaded with olives, these feta cheese and olives sticks make the perfect snack.
You can prepare an absolutely delicious snack at home, from scratch, with a handful of ingredients.
The dough is simple and easy to make: just combine all the ingredients. For best results, after preparation you have to refrigerate the dough for about 1 hour. The dough will be easier to work with.
After 1 hour, roll the dough into a 4-5 mm sheet, cut into sticks, brush with egg wash and transfer to a baking dish. You may sprinkle some poppy seeds or sesame seeds, but dried herbs, like oregano or thyme, are also a good choice.
You may serve these delicious feta cheese and olives sticks warm or cold, as a snack or as an appetizer. My husband says they go well with a glass of beer 🙂


Ingredients for feta cheese and olives sticks:


– 500 gr flour
– 350 gr feta cheese
– 150 gr butter
– 2 eggs
– 100 gr plain yogurt
– 120-150 gr black pitted olives
For the egg wash: 1 egg yolk mixed with 1-2 tablespoons of water or milk
For sprinkle: poppy seeds or sesame seeds

 




How to make feta cheese and olives sticks:


Finely dice the olives. Set aside.
Place the flour and diced butter into a large bowl. Mix well with your hand to incorporate the butter. You should obtain a mixture which looks like breadcrumbs. Add grated feta cheese, finely diced olives, 100 gr plain yogurt and the 2 eggs. Knead with your hand until combined.
Cover the dough with plastic wrap and place it into the refrigerator for about 1 hour.Remove the dough from the refrigerator and place it onto slightly floured working surface. Divide the dough into 2 pieces, because is easier to work with smaller pieces of dough.
Place 1 piece of dough onto floured working surface.
Use a roller pin to roll the dough into a 0.5 cm thick sheet. Use a sharp knife to cut into halves, lengthwise. Cut each half into 1.5 cm strips. Brush with egg wash and transfer to a baking tray lined with parchment paper.
Sprinkle some poppy seeds.Place the baking tray into the preheated oven and bake at 180ºC for about 15-20 minutes or until golden brown.




 


Remove from the oven and allow to cool on wire racks.Repeat with the remaining piece of dough.Serve these delicious feta cheese and olives sticks warm or cold, as a snack or as an appetizer.
