Mushrooms and cheese stuffed meatloaf (video recipe)

This delicious mushrooms and cheese stuffed meatloaf makes the perfect choice for a family dinner but also for a fancy dinner. It’s juicy and flavored and it looks great.
It’s also easy to make. You have to make a very large patty and fill it with mushrooms and cheese.
The mushrooms contain a big amount of water and they have to be cooked before being added to the meatloaf. You must cook the mushrooms until the whole water evaporates. Otherwise, you will obtain something like a soup with meat and mushrooms.
As concerning the meat, I used minced chicken but you can use your favorite meat.

You can serve this delicious mushrooms and cheese stuffed meatloaf with your favorite garnish or salad or as an appetizer. You can also use it to prepare delicious sandwiches.

Ingredients for mushrooms and cheese stuffed meatloaf

    • 1 kg (2.20 lbs) ground meat
    • 750 gr (1.65 lbs) fresh button mushrooms
    • 100 gr (3.52 oz) cheese, grated
    • 1 onion
    • 2 tablespoons vegetable oil
    • 5-6 garlic cloves
    • 1 large bunch fresh parsley (half for meat and half for mushrooms)
  • salt, pepper and dried thyme to taste
You also need:
    • a small piece of butter and breadcrumbs
  • 1-2 tablespoons vegetable oil for brushing the meatloaf

How to make mushrooms and cheese stuffed meatloaf

Wash the mushrooms and chop them into small pieces. Set aside.
Finely chop the onions and place it into a skillet with 2 tablespoons of vegetable oil.
Cook until the onions turns glossy. Add the chopped mushrooms and season with salt and pepper. Cook until the water left by mushrooms completely evaporates. Remove from heat and add chopped parsley (half of bunch). Set aside.

Use a bowl to mix together minced meat, crushed garlic and chopped parsley (the other half of bunch). Season with salt, pepper and dried thyme. Mix well until combined.
Place the prepared meat between 2 plastic wraps. Use a roller pin to roll the meat into a 29/35 cm (11.41/13.7 inches) rectangle.
Remove the upper plastic sheet.
Spread the mushrooms over the meat, leaving the edges clean. Sprinkle grated cheese over the mushrooms.
Tightly roll the meat into the plastic wrap, like a salami. Push the heads inside the meatloaf.
Butter the tray (30/11.5 cm – 11.8/4.5 inches) and sprinkle breadcrumbs. Lay the tray on one side. Remove the plastic wrap and gently push the meatloaf into the baking tray.
Place the mushrooms and cheese stuffed meatloaf into the preheated oven. Bake at 190ºC (374 ºF) for 50 minutes.
Serve warm with your favorite garnish, or cold, as an appetizer.
