Tender and very tasty, these vegan onion crackers are my favorites! They are also very easy to make, with only a handful of ingredients that I’m sure you always can find in you kitchen. All you have to do is to soté the onions, mix together all the ingredients and bake.
For a plus of flavor, sprinkle over the crackers a bit or dried thyme or dried oregano. You can also sprinkle poppy seeds.
These vegan onion crackers make the perfect snack. They go very well with a glass of cold beer 🙂
Ingredients for vegan onion crackers
80ml vegetable oil
1/2 teaspoon baking powder
1 teaspoon salt
1 onion (135-150gr)
Optional: dried thyme or oregano to sprinkle
How to make vegan onion crackers
Use a bowl to mix together flour, salt and baking powder. Set aside.
Finely chop the onion and place it into a skillet along with 2 tablespoons of vegetable oil (from the 80ml mentioned above).
Place the skillet over medium heat and cook, stirring occasionally, until the onion turns golden. Set aside and allow to cool.
Place into a large bowl the rest of vegetable oil, water and cooked onion. Mix to combine.
Add the flour mixed with salt and baking powder. Add the flour gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, start kneading. Knead until the whole flour is incorporated.
Place the prepared dough onto the working surface. Use a roller pin to roll the dough into a half a centimeter thick sheet. Use a cookie cutter (or a glass) to cut the crackers.
Grab the remaining dough and roll it again. Cut more crackers. Repeat until you finish the dough.
Place the crackers into a non-stick baking tray (or any other tray lined with parchment paper). Sprinkle dried thyme (or oregano) over the crackers.
Place the tray into the preheated oven and bake at 190ºC for 12-15 minutes.
Allow to cool on wire racks and serve.
