Broccoli and ham salad

Very tasty and nourishing, this broccoli and ham salad makes a great make-ahead entrée. It’s also a good choice for a quick lunch or dinner.
It’ an easy to make salad, with only a handful of  ingredients. Yet you have to pay attention to not overcook the broccoli. Broccoli needs to be cooked only for 3-4 minutes.
After that you have to drain the broccoli and move it into a bowl with water and ice cubes. In this way you’ll stop the cooking process and broccoli will be cooked but firm.

Ingredients for broccoli and ham salad

         1kg broccoli
         1 bunch spring onions
         350gr smoked ham
         200gr pickles
         500-600gr mayonnaise (you can mix mayo with yogurt)
         salt to taste

How to make broccoli and ham salad

Remove the broccoli florets with a knife. Set aside.
Fill a large pan with water, add a pinch of salt and bring to a boil.
Add the broccoli and cook for 3-4 minutes or until tender.
Drain the broccoli and transfer into a large pan with water and ice (or very cold water from the refrigerator). Allow to cool for a few minutes and drain. Set aside.
Chop the spring onions into rings. Place the onion rings into a large bowl.
If necessary, cut the broccoli florets into bite sized pieces. Place the broccoli florets into the bowl.
Add the pickles, sliced, and the ham cut into strips.
Add the mayonnaise and mix well.
Taste the salad and if it’s necessary, season with salt and pepper.
You can serve this delicious broccoli and ham salad right away or you can refrigerate it for 30 minutes to allow the flavors to combine.
