Vanilla and cinnamon flavored, tender, easy to make and yet vegan, these apple and raisin cookies are so delicious that you won’t be able to stop eating
You have to cook the apples before adding them to the batter. Then mix all the ingredients, shape the cookies and bake. It’s very easy.
I love these apple and raisin vegan cookies, although I’m not a vegetarian. They are absolutely delicious. You really have to try them!
Ingredients for apple and raisin vegan cookies
250 gr (1 cup and 1 tablespoon) flour
100 ml (1/4 cup and 3 tablespoons) vegetable oil
50 ml (3 tablespoons and 1 teaspoon) water
1/2 teaspoon baking powder
1/2 teaspoon baking soda
a pinch of salt
1/2 teaspoon ground cinnamon
30-45 gr (2-3 tablespoons) sugar
80 gr (2.82 oz) raisins
How to make apple and raisin vegan cookies
Wash and grate the apples, unpeeled.
Place the grated apples into a skillet. Add 1 tablespoon sugar. Place the skillet over medium heat and cook until reduced. At the end taste the apples and see if needed more sugar.
Remove from heat and add 1/2 teaspoon ground cinnamon. Set aside and allow to cool.
Mix together flour, 1/2 teaspoon baking powder, 1/3 teaspoon baking soda and a pinch of salt. Set aside.
In a large bowl mix together vegetable oil, water, 1 tablespoon sugar and 2 teaspoons vanilla flavor. Add the apple and raisins and stir to combine.
Add the flour, gradually, stirring with a wooden spoon. When the batter becomes too thick to stir, knead until the whole flour is incorporated. You must obtain an oily and thick dough.
Scoop 1 tablespoon of dough and roll into a ball. Flatten the ball between your palms.
Repeat with the rest of the dough.
Place the apple and raisin cookies into a non-stick baking tray (or any other tray lined with parchment paper).
Place the tray into the preheated oven and bake at 190°C (374° F) for 12-15 minutes.
Allow to cool on wire racks and serve.
