No bake, very easy to make and absolutely delicious, Diplomat cake is the most popular cake in Romania. It’s a wonderful combination of vanilla cream, whipped cream, fruits, and ladyfingers.
To prepare this cake I used a 25cm (9.84in) diameter pot. I made an upside down cake. If you use a loose base cake tin, start assembling the cake with the ladyfingers layer.
After preparation, you must refrigerate the Diplomat cake for at least 6 hours. Over night is even better.

– 500 ml (2 cups and 2 tablespoons) milk
– 500 ml (2 cups and 2 tablespoons) whipping cream
– 4 egg yolks
– 200 gr (1 cup) granulated sugar
– 2 tablespoons flour
– vanilla extract
– 20 gr (0.7 oz) gelatin
– 200 gr (7 oz) ladyfingers
– 1 can pineapple
– 3 oranges
– 3 kiwi
How to make Diplomat cake
How to make the vanilla cream
Set aside 4-5 tablespoons of cold milk. Warm the rest of the milk until it becomes hot. Set aside.
In a heatproof pan place the 4 yolks and the sugar. Mix until creamy and pale. Add half of the flour and mix to combine. Add the cold milk and incorporate. Add the rest of the flour and mix to combine.
Add the hot milk, gradually, mixing in the same time.
Place the pan over heat and cook, stirring continuously, until thickens. The vanilla pastry cream is cooked when it starts to make bubbles.
Remove from heat, add the vanilla extract and stir.
Cover with plastic wrap, right over the cream, and allow to cool.
Place the gelatin in a bowl along with 150 ml cold milk (or water) and allow to rest for about 10 minutes.
After 10 minutes you have to melt the gelatin using bain – marie method. Choose a heatproof pan (just a little bit larger than the bowl) to fill it water. There should be about 2 cm of space between the water and the bottom of the bowl.
Pour water into the pot, place it over medium heat and bring to a boil.
Place the bowl with gelatin on top of the pot with simmering water. Reduce the heat and cook until the gelatin is completely melted.
Remove from heat and allow to cool until room temperature.
Note: When preparing the gelatin, see also the instructions from the package because there might be some differences.
Place the whipping cream into a large bowl. Mix until fluffy. Add the vanilla cream and mix to combine. Add the liquid gelatin and mix to incorporate.
Prepare the fruits. Peel the oranges and the kiwi. Cut a few slices for the top. Chop the remaining fruits into small pieces.
Drain the pineapple and keep the juice. Chop the pineapple into small pieces.
How to assemble the Diplomat cake
Line the pot with plastic wrap.
Cover the bottom and the edges of the pot with fruit slices.
Pour 1/3 of cream. Sprinkle pieces of fruits.
Pour another 1/3 of cream and sprinkle more fruits.
Pour the rest of the cream.
Place the pineapple juice into a bowl. Quickly soak the ladyfingers into the juice.
Top the cake with ladyfingers.
Refrigerate the Diplomat cake for at lest 6 hours.
When you remove the cake from the fridge you have to turn it upside down on a platter. After turning the cake upside down, it will have the ladyfingers at the bottom and fruits on the top.
