Very tasty and easy to make, these cheesy potato bites are perfect for parties. They are made from mashed potatoes mixed with cheese, coated with breadcrumbs and deep fried.
Mashed potatoes must be from the day before. If you don’t have leftovers, you can boil a few potatoes, unpeeled. Unpeeled potatoes absorb less water.
You can serve these cheesy potato bites as an appetizer or as a snack.
Ingredients for cheesy potato bites
Note: metric and USA measurements
350 gr (12.34 oz) mashed potatoes
150 gr (5.29) grated cheese
50 gr (5 tablespoons) flour
salt and pepper to taste
breadcrumbs for coating
vegetable oil for frying
How to make cheesy potato bites
If you don’t have mashed potatoes leftovers, start by boiling the potatoes.
Wash the potatoes and place them in a saucepan with water and salt. Cover the saucepan and bring to a boil.
Simmer until the potatoes are tender when pierced with a fork.
Drain the potatoes and allow to cool.
Peel the potatoes and place them into a large bowl. Mash the potatoes.
Season with salt and pepper, add the egg and mix well with a spoon.
Add the grated cheese and mix.
Add the flour and mix with a spoon to incorporate. You must obtain a dough easy to shape. If the dough is too sticky, you can add a little more flour.
Scoop 1 teaspoon (full) of dough and roll into a ball. Roll the ball through breadcrumbs until evenly coated. Set aside.
Repeat with the remaining dough.
Heat vegetable oil into a saucepan. Fry the potato balls, in batches, in hot oil, until golden brown on both sides. Drain on paper towels.
