Although cauliflower isn’t one of my favorite veggies, there are some cauliflower recipes that I really love. This cheesy cauliflower casserole is one of them 🙂 It’s creamy, cheesy and garlic flavored. The cauliflower flavor is quite subtle and perfectly balanced.
To prepare this recipe I prefer to use sour cream but you can also use Bechamel sauce, heavy cream or milk.
As regarding the cheese, you may use your favorite cheese, even leftovers from the fridge.
This cheesy cauliflower casserole is also very easy to prepare. You have to pay attention though to not overcook the cauliflower. You have to toss cauliflower florets into simmering water, bring back to a boil and cook for 3 minutes, otherwise you’ll get a mushy mixture.
You may serve this delicious cauliflower casserole as a starter, as a side dish but also as a meal. It’s very filling and comforting and you have to give it a try, even though you’re not a cauliflower’s fan.
The below ingredients are for a 20/20 cm (7.87/7.87 inches) baking dish
Ingredients for the cheesy cauliflower casserole:
– 600 gr (21.6 oz) cauliflower
– 200 gr (7.05 oz or 1 cup) sour cream
– 200 gr (7.05 oz) cheese
– 2-3 garlic cloves
– salt and pepper to taste
You also need butter and breadcrumbs for coating the baking dish.
For garnishing: fresh parsley
How to make the cheesy cauliflower casserole:
Start by cooking the cauliflower.
Fill a large pot with cold water and add some ice cubes. Keep the pot into the refrigerator.
Fill another large pot with water. Place the pot over medium heat, add salt and bring to a boil.
Meanwhile cut the cauliflower into florets.
Toss the cauliflower florets into simmering water, bring back to a boil and cook for 3 minutes. You shouldn’t overcook the cauliflower because you’ll get a mushy mixture.
Drain the cauliflower and transfer to the pot with cold water and ice to stop the cooking process. Allow to cool for 2-3 minutes then drain the cauliflower.
Use a bowl to combine the sour cream and crushed garlic. Season with salt and pepper. Set aside.
Place the cauliflower into a baking dish coated with butter and breadcrumbs. Spread evenly the sour cream mixture and sprinkle grated cheese.
Place the baking dish into the preheated oven and bake at 190º C (374º F) for about 20-30 minutes or until golden brown.
Serve this delicious cheesy cauliflower casserole warm or at room temperature, garnished with fresh parsley.
