Cheesy cauliflower fritters

I have a special relationship with cauliflower: it’s not my favorite veggie but there are a few cauliflower recipes which I really love. These cheesy cauliflower fritters are a good example of how we can prepare a delicious meal using an ingredient which isn’t our favorite :). They are juicy, flavorful and cheesy and quite easy to prepare.
To prepare these delicious cauliflower fritters you should start by cooking the cauliflower florets for about 3 minutes. Then you have to combine finely chopped cauliflower with the rest of the ingredients. You’ll get a quite wet mixture which you have to shape into fritters, coat with breadcrumbs and bake. I prefer baked fritters but, if you wish, you can fry them.
You may serve these delicious cheesy cauliflower fritters as a snack, as an appetizer or as a main dish along with your favorite garnish. They go well with salad, with roasted potatoes or rice. You can also use these delicious cauliflower fritters to prepare delicious burgers.
My kids loved these fritters although they kind of hate cauliflower 🙂
This recipe makes about 17-20 fritters.

Ingredients for the cheesy cauliflower fritters:

– 500 gr (17.63 oz) cauliflower
– 200 gr (7.05 oz) cheese
– 3 eggs
– 1 onion
– 3 garlic cloves
– 1 bunch fresh dill
– 4-5 tablespoons flour
– 4-5 tablespoons breadcrumbs
– salt and pepper to taste
You also need breadcrumbs for rolling the fritters.

How to make the cheesy cauliflower fritters:

You should start by cooking the cauliflower.
Fill a large pot with cold water and add some ice cubes. Keep the pot into the refrigerator.
Fill another large pot with water. Place the pot over medium heat, add salt and bring to a boil.
Meanwhile cut the cauliflower into florets.
Toss the cauliflower florets into simmering water, bring back to a boil and cook for 3 minutes.
Drain the cauliflower and transfer to the pot with cold water and ice to stop the cooking process. Allow to cool for 2-3 minutes, then drain the cauliflower.
Finely chop the cauliflower and place it into a large bowl. Add finely chopped onion, crushed garlic, chopped dill, eggs and grated cheese. Stir well to combine. Season with salt and pepper. Add flour and breadcrumbs, spoon by spoon, until achieving the desired consistency. You should obtain a wet mixture.

Form the patties with your hands. The mixture is wet and you have to press it well between your palms. Roll the patties through breadcrumbs.
Place the cauliflower fritters into a slightly oiled baking sheet.
Place the baking sheet into the oven and bake at 190ºC (374ºF) for about 15 minutes. Then flip the fritters on the other side and bake for another 12-15 minutes.
Serve these delicious cheesy cauliflower fritters warm, as a snack, as an appetizer or as a main dish along with your favorite garnish.
