Soft, fluffy and loaded with sunflower seeds, these pretzels make the perfect snack.
Traditional German pretzels
require a baking soda bath which ensure that special texture: chewy and a little bit crispy on the outside and soft on the inside.
I wanted fluffy pretzels with soft crust, so I skipped the baking soda bath. Instead, I brushed my pretzels with egg wash.
You may serve these delicious sunflower seed pretzels warm or cold, as a snack. They go well with Greek yogurt.
– 450 gr (2 and 2/3 cups) flour
– 250 ml (1 cup and 1 tablespoon) lukewarm water
– 30 ml (2 tablespoons) vegetable oil
– 12.5 gr (0.44 oz) fresh yeast
– 1 teaspoon (3 ml)/ 1/2 teaspoon (5 ml) salt
– 1 teaspoon (3 ml)/ 1/2 teaspoon (5 ml) sugar
– 130 gr (1 cup) sunflower seeds
For the egg wash: 1 egg yolk mixed with 1 tablespoon of water or milk
For sprinkle: sunflower seeds and coarse salt
Use a small bowl (or a cup) to mix together fresh yeast and 1 teaspoon of sugar. Mix until the yeast turns fluid. Set aside.
Pour lukewarm water into a large bowl. Add vegetable oil and salt.
Add the fresh yeast (fluid) and stir to combine.
Add the flour, gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, continue to knead until the whole flour is incorporated. You should obtain a smooth and non-stick dough. If the dough is too sticky, you can add a little more flour (1-2 tablespoons)
Add the sunflower seeds in 2 or 3 batches and knead until they are evenly incorporated into the dough..
Place the dough into a lightly oiled bowl, cover with plastic wrap and allow to rise for about 45 minutes – 1 hour (or until double in size).
Place the risen dough onto the lightly oiled working surface.
Divide the dough into 10 equal pieces.
Shape each piece into a rope of 40 cm length, then shape the pretzels: bring the two ends together, overlap them, twist and bring back over the main body.
Place the pretzels into a baking tray lined with parchment paper. Allow to rest in warm place for about 20 minutes.
Brush the pretzels with egg wash and sprinkle sunflower seeds and coarse salt.
Place the pretzels into the preheated oven and bake at 200º C (392º F) for about 20 minutes or until golden brown.
