Ham and cheese muffins recipe

Loaded with melted cheese and ham, these delicious muffins make the perfect breakfast. These savory muffins are also a good choice for an after school snack, for brunch and even for parties, as an appetizer.
You can add your favorite ingredients and the good part is that you can also recycle leftovers. I always have in the fridge a piece of cheese or a piece of ham which nobody wants to eat. So, if you decide to prepare savory muffins, check your fridge first. I’m sure you’ll find interesting things there :).
Anyway, cheese is very important, is the key ingredient for these muffins. You can use your favorite cheese, no matter which is, and you can also use more types of cheese.
Instead of ham you can use sausages, pastrami or cooked chicken. As I was saying, you may use any leftovers from the fridge.
You may also add vegetables but most of them must be cooked first.
Ham and cheese muffins are very easy to make: combine all the ingredients, divide the batter among muffin cups and bake. You have to give them a try!
You may serve these delicious ham and cheese muffins for breakfast, as a snack or as an appetizer.

Ingredients for ham and cheese muffins:

– 300 gr (2 and 1/3 cups and 1 tablespoon) flour
– 150 gr (1 cup and 2 tablespoons) diced ham
– 150 gr ( 1 cup and 1/3) grated cheese
– 125 gr (1/2 cup) yogurt
– 125 ml (1/2 cup and 1 teaspoon) milk
– 1 egg
– 30 ml (2 tablespoons) vegetable oil
– 3 green onions
– 65 gr (1/2 cup) chopped pitted olives
– 10 gr (2 and 1/2 teaspoons) baking powder
– salt to taste



How to make ham and cheese muffins

Use a medium bowl to combine flour, salt and baking powder. Set aside.
Place the egg into a large bowl and mix until fluffy.
Add the milk, the yogurt and the vegetable oil and mix after each one to combine.
Add the flour (combined with baking powder) and stir with a wooden spoon (or a spatula) to incorporate.
Add grated cheese, chopped green onions, diced ham and chopped olives.
Stir to combine.



Spoon the batter into 12 muffin cups.
Place the muffins into the preheated oven and bake at 190ºC (374ºF) for about 20 minutes (or until golden brown on top).
Allow to cool for a few minutes and serve.
These delicious ham and cheese muffins go well with Greek yogurt :).
