Yogurt pie with phyllo dough

I love pies, no matter what the filling is, sweet or savory. I already posted some Greek pies with phyllo dough: Spanakopita (Greek spinach and fete pie) and Kolokithopita (Greek zucchini and feta pie). This yogurt pie with phyllo dough is rather Romanian than Greek, or at least is more popular in Romania :). Anyway, the origins aren’t very important but the taste is absolutely divine.
This pie is a delicious combo of crispy phyllo dough and creamy, vanilla flavored yogurt filling. And, of course, there’s raisins, because I love them. If you don’t like raisins you can replace them with cherries, sour cherries, raspberries or something similar.
This yogurt pie is also very easy to prepare because I used frozen phyllo dough. You have to thaw the phyllo dough and prepare the filling by mixing all the ingredients. It’s a matter of minutes 🙂
Then assemble the pie placing phyllo dough sheets and yogurt filling into the baking dish, alternately. Reserve about 2 ladles of yogurt filling for the top for a softer crust.
This yogurt pie with phyllo dough is absolutely delicious and incredibly easy to make and you have to give it a try! You’re definitely going to love it!
For baking I used a 25/35 (9.83/13.77 inches) cm baking tray.

Ingredients for yogurt pie with phyllo dough:

– 1 kg (4 cups) plain yogurt
– 400 gr (14.10 oz) phyllo dough (15 sheets)
– 300 gr (1 and 1/2 cup) granulated sugar
– 150 gr (1 cup) raisins
– 50 gr (1/2 stick minus 1/2 tablespoon) butter, melted
– 70 ml (4 tablespoons and 2 teaspoons) vegetable oil
– 50 gr ( 4 tablespoons and 1 teaspoon) semolina flour
– 8 eggs
– a pinch of salt
– vanilla flavor


How to make yogurt pie with phyllo dough:

Remove phyllo dough from the freezer and allow to thaw.
Preheat the oven to 170° C.
Meanwhile prepare the filling.
Crack the eggs into a large bowl. Add a pinch of salt and mix until foamy.
Add the sugar and vanilla flavor and mix to combine. Add the yogurt and mix. Add semolina flour and mix to incorporate.This is the filling and, as you can see, is very easy to prepare. Now you can assemble the yogurt pie.
Use a bowl to combine melted butter and vegetable oil. Brush the bottom and the sides of the baking tray with this mixture.
Place 5 phyllo dough sheets into the tray and brush each one with butter-oil mixture. If the sheets are larger than the tray, fold them to fit the tray.


Reserve 2 ladles of yogurt filling for the top.
Spread half of the yogurt filling over the 1st layer of phyllo dough sheets and sprinkle half of raisins.
Over the filling place the second layer of 5 phyllo dough sheets and brush each one with butter-oil mixture.
Spread the rest of the filling and sprinkle the remaining raisins.
Place the 3rd layer of phyllo dough sheets and brush each one with butter-oil mixture.Top with the reserved yogurt filling.
Place the yogurt pie into the preheated oven and bake at 170° C (338° F) for about 45 minutes or until golden on top.Allow to cool completely and cut into pieces. You may serve this delicious yogurt pie with phyllo dough as is or dusted with confectioners’ sugar. It’s absolutely divine! 🙂
