Absolutely delicious, quick and easy to make, this green bean salad with mayonnaise is a great appetizer. It’s very tasty and flavorful and you can prepare a large amount in less than half an hour.
To prepare this delicious salad you can use green or yellow beans, fresh or frozen. I prefer to use frozen beans because is already chopped :). Frozen beans has also the advantage that I can find it in the supermarket all year long.
As regarding the mayo, you all know that homemade mayo is the best, right? But the store-bought mayo goes well also especially when you’re in a hurry.
If you’re on diet, you can prepare a lighter version using my yogurt salad dressing recipe which is very delicious, tastes like real mayo but it contains much less calories. You can also combine mayonnaise with yogurt.
I also added garlic to my salad but if you don’t like it you can add chopped onion. And, for a plus of taste and flavor, I like to add some fresh dill.
You may serve this delicious green bean salad as a snack, as an appetizer or even as a side dish. I love to spread it on crusty bread 🙂
Ingredients for green bean salad with mayonnaise:
– 500 gr (17.63 oz) frozen green or yellow frozen beans
– 3-4 garlic cloves
– 400 gr (14.10 oz) mayonnaise
– 100 gr (3.52 oz) plain yogurt
– 1/2 bunch fresh dill
– salt to taste
How to make green bean salad with mayonnaise:
Fill a large pot with cold water and add some ice cubes. Keep the pot into the refrigerator.
Pour water into a large pot, add salt and bring to a boil. Toss the frozen green beans into simmering water and bring back to a boil. Coon until the green beans are tender when pierced with a fork.
Drain the green beans and transfer to the pot with cold water and ice to stop the cooking process. Allow to cool for 2-3 minutes then drain the green beans. Place the beans into a bowl.
Add the mayonnaise, the yogurt, crushed garlic and chopped dill.
Stir to combine.
Season with salt, stir a little bit and your green bean salad with mayonnaise is ready.
You may serve this delicious salad right away or you can refrigerate it for about 30 minutes to allow flavors to blend. It goes perfectly with crusty bread.
