Chocolate sponge cake recipe

Soft, flaky and incredibly easy to make, this chocolate sponge cake is every chocolate lover’s dream. All you need is these 4 ingredients: eggs, flour, sugar and cocoa. You may fill this cake with your favorite cream: chocolate or vanilla custard, nutella, butter cream or any other cream.
To prepare this delicious chocolate sponge cake you have to follow the same steps as for plain sponge cake. The only difference is that you have to combine flour with cocoa. So, in this case the magic formula fir the perfect chocolate sponge cake is flour+cocoa+sugar=eggs (weight without shells).
All the other rules are applicable and you have to respect them.
You may use this recipe to prepare your favorite chocolate cake. You can also prepare fruit cakes or cake rolls.
This chocolate sponge cake is so delicious that you can serve it as is, with a dust of sugar.

Ingredients for the chocolate sponge cake (for a 20 cm/ 7.87 in baking tray):

– 6 eggs (300 gr/ 10.58 oz without shells weight)
– 150 gr (3/4 cup) granulated sugar
– 110 gr (1 cup minus 2 tablespoons) flour
– 40 gr (7 tablespoons) cocoa powder
– a pinch of salr
– vanilla flavor

How to make chocolate sponge cake

This cake is quick and easy to make and you should start by preheating the oven to 170ºC (338º F).
Next, prepare the baking tray: line the bottom with parchment paper and butter the sides. Set aside.
Sift together flour and cocoa powder. Set aside.
Separate the yolks from whites.
Place the whites into a large mixer bowl.
Note: the bowl and the mixer MUST be clean.
Add a pinch of salt and beat the whites until stiff peaks form.
Add the sugar in 2 or 3 steps and continue to mix until the sugar is completely dissolved.
To check if the sugar is completely dissolved put some foam between your thumb and your forefinger and you shouldn’t feel any sugar. You should obtain a very firm and glossy foam.
Add the vanilla extract and the egg yolks, one by one and briefly mix after each one to incorporate.
Add the flour combined with cocoa powder, gradually, and easily stir with a spatula (up-dow moves) to incorporate.
Pour the batter into the baking tray. Use a spatula to level the batter.
If you want to prepare a fruit cake, now is the moment to add the fruits.
Place the chocolate sponge cake into the preheated oven and bake at 170ºC (338º F) for 25-30 minutes.
To check if the chocolate sponge cake is done: prick the center of the cake with a toothpick. The toothpick must come out clean. If the toothpick comes out wet, you should bake the cake for a few more minutes.
Remove from the oven and allow to cool on wire racks.
Using a long knife, cut the chocolate sponge cake into 3 equal pieces. Fill the cake with your favorite cream.
Also, you may serve this delicious chocolate sponge cake as is, with a dust of sugar.
