Feta cheese and onion bagels

Soft, fluffy, very tasty and flavorful, these feta cheese and onion bagels make the perfect choice for breakfast or for a quick afternoon snack.
These bagels are also easy to make. You have to make a regular bread dough and add caramelized onions and grated feta cheese. Instead of feta cheese, you may add your favorite cheese.
Don’t skip the egg wash. It’s essential if you want to obtain very soft bagels with a thin and elastic crust. If you want a crispy crust, you may brush the bagels with vegetable oil.
And for flavor, sprinkle some dried thyme or oregano.
You may serve these delicious feta cheese and onion bagels along with a Greek yogurt or with your favorite spread.

Ingredients for feta cheese and onion bagels

– 450 gr (3 and 1/2 cups) flour
– 250 ml (1 cup and 1 tablespoon) lukewarm water
– 45 ml (3 tablespoons) vegetable oil
– 7 gr (1 tablespoon) dried yeast
– 1 teaspoon salt
– 1 teaspoon sugar
– 1 onion
– 300 gr (10.58 oz) feta cheese
For the egg wash: 1 egg yolk mixed with 1-2 tablespoons of milk or water
For sprinkle: dried oregano or dried thyme

How to make feta cheese and onion bagels

You should start by caramelizing the onions. Finely chop the onion and place it into a skillet along with 3 tablespoons of vegetable oil.
Place the skillet over medium heat and cook, stirring often, until glossy and yellow.
Note: it’s not necessary to allow to cool.
Remove from heat.
Use a medium bowl to stir together flour and dried yeast. Set aside.
Use a large bowl to combine lukewarm water, sugar and salt.
Add the caramelized onion along with the vegetable oil from the skillet and stir to combine.
Add the flour (combined with dried yeast), gradually, stirring with a wooden spoon.
When the dough becomes too thick to stir, continue to knead until the whole flour is incorporated. You should obtain a non-stick, smooth and elastic dough. If the dough is too sticky, you may add a little more flour (1-2 tablespoons).
Transfer the prepared dough into a slightly greased bowl and cover with plastic wrap. Place the bowl in a warm place and allow to rise for about 45 minutes – 1 hour ( or until double in size).
Place the grated feta cheese on top of the risen dough. Knead to incorporate. Cover with plastic wrap and allow to rest for about 20-30 minutes.

Place the dough onto the floured working surface and divide it into 10 equal pieces.
Take 1 piece of dough and flatten it.
Coat your forefinger with flour. Poke the center of the dough to form a ring. Stretch the ring a little bit. Place the formed bagel into a non-stick baking tray (or a regular tray lined with parchment paper).
Repeat with the remaining pieces of dough.
Cover the bagels with plastic wrap and allow to rest for about 30 minutes.
Brush with egg wash and sprinkle some dried oregano or dried thyme.
Place the bagels into the preheated oven and bake at 200ºC (392ºF) for about 20-25 minutes (or until golden brown).
Allow to cool on wire racks and serve.
