This vanilla custard slice is a very popular Romanian dessert. It is made with vanilla custard and puff pastry and, optional, with whipped cream. It’s an absolutely delicious dessert, an incredible combo of creamy, sweet, vanilla flavored filling and crispy and crumbly puff pastry.
This vanilla custard slice is also incredible easy to make, of course, if you decide to use commercial puff pastry. You also have the possibility to prepare puff pastry from scratch but it takes a lot of time. I have to admit that I prefer the faster and easier way: I call my husband and ask him to buy a pack of frozen puff pastry :).
So, all I have to do is to thaw and bake the puff pastry. Difficult job, right? 🙂
The vanilla custard is very easy to prepare. Heat the milk, mix the egg yolks with sugar, then add the flour and hot milk and cook until the mixture starts to make bubbles.
To assemble the vanilla custard slice, you have to place into a baking tray 1 sheet of baked puff pastry, evenly spread the vanilla custard, then the whipped cream and top with the second sheet of puff pastry, crumbled.
Note: if you crumble the upper puff pastry sheet, it will be easier to cut.
Ingredients for vanilla custard slice (for a 25/35cm – 9.84/13.77in baking tray)
– 900 gr (1.98 lb) frozen puff pastry (you need 2 sheets), thawed
– 1.2 L (5 cups 1 tablespoon and 1 teaspoon) milk
– 6 egg yolks
– 150 gr (1 cup and 2 tablespoons) flour
– 200 gr (1 cup and 1/4) granulated sugar
– vanilla flavor
– 100 gr (1 stick minus 1 tablespoon) butter
– 300 ml (1 and 1/4 cup) whipping cream
How to make the vanilla custard slice.
You should start by baking the puff pastry.
You need 2 puff pastry sheets, large enough to fit the baking tray. If they don’t fit, you have to roll them up until they fit.
Place 1 sheet of puff pastry into the baking tray and prick it with a fork.
Bake at 200º C (392ºF) for about 15-18 minutes.
Repeat with the second puff pastry sheet.
Allow to cool.
Meanwhile prepare the vanilla custard.
Reserve a few tablespoons of cold milk an heat the rest of it. Set aside.
Place the sugar and the egg yolks into a medium pot. Mix at high speed until creamy and pale.
Add the flour, gradually, and mix to incorporate. When the mixture becones too thick, add the reserved cold milk and mix to combine. Now it will be easier to incorporate the rest of flour.
Pour in the hot milk and stir to combine.
Place the mixture over low-medium heat and cook, stirring constantly, until thickened. The vanilla custard is done when it starts to make bubbles.
Remove from heat and add the vanilla flavor.
Allow to cool a little (until lukewarm) and add soft butter. Mix to combine. Set aside.
Place the whipping cream into a large bowl. Mix until stiff peaks form.
How to assemble the vanilla custard slice.
Place 1 sheet of puff pastry into the baking tray.
Evenly spread the vanilla custard.
Over the vanilla custard evenly spread the whipped cream.
Top with the second sheet of puff pastry, crumbled.
Refrigerate for a few hours.
Cut into pieces and serve with a dust of sugar (or coconut flakes).
