Easy peas, ground beef and couscous skillet

Do you know that feeling when you get home late and you have to cook dinner for your family? I do :). And I found out that is very easy to cook a delicious dinner using ground beef and frozen veggies. Couscous is also a good choice for a quick dinner but choose fine couscous (which is similar to bulgur) because it doesn’t need to be cooked. It just need hot water :).
But let’s get back to our dinner. I’ve made a delicious combo of peas, ground beef and couscous, very tasty, quick and easy to make.
Instead of peas, you may use your favorite veggies, fresh or frozen, even canned. You may use green beans, Mexican mix veggies, zucchini, eggplants, sweet corn, mushrooms, potatoes or whatever you like.
To make the dinner very quick, you have to cook the veggies and the ground beef in the same time (in different pots, of course). The first step is to fill a pot with water (if you have hot water it will be great), cover with a lid and bring to a boil. Then toss the frozen peas into the simmering water. You don’t have to thaw the peas. Meanwhile, sauté the onion, stir in the ground beef and cook until brown.
The peas and the meat should be ready almost in the same time. The whole process should take about 30 to 45 minutes.
You may serve this delicious easy peas, ground beef and couscous skillet warm, garnished with fresh dill. If you want a super delicious meal, add some grated cheese and a dollop of sour cream 🙂



Ingredients for easy peas, ground beef and couscous skillet

– 1 kg (2.20 lbs) frozen peas
– 800 gr (1.76 lbs) ground beef
– 1 onion
– 1/2 cup tomato paste (or to taste)
– 150 gr (1 cup) fine couscous
– 1 bunch of fresh dill
– 30 ml (2 tablespoons) of vegetable oil
– salt, pepper and dried thyme to taste
– about 2.5 L (10 and 2/3 cups) of water or as needed

How to make easy peas, ground beef and couscous skillet

You should start by cooking the peas.
Pour about 2.5 L of water (about 10 and 2/3 cups) into a medium pot. You need just enough water to cover the peas. You may use hot water.
Add salt, cover with a lid, place the pot over high heat and bring to a boil. Toss the frozen peas into the simmering water, cover with a lid and cook until cooked through.
Remove from heat and set aside.
Meanwhile prepare the ground beef.
Finely chop the onion and place it into a large skillet (a wok) along with 2 tablespoons of vegetable oil.



Place the skillet over medium heat and cook, stirring often, until glossy. Add the ground beef, season with salt, pepper and dried thyme and cook until brown.
Stir in the peas along with the cooking water. You may use all the water or as much as you need.
Add the tomato paste and bring to a boil. Simmer for about 7-8 minutes to allow flavors to blend.
Remove from heat and stir in 1 cup of couscous and chopped dill.
Cover with a lid and allow to rest for about 7 minutes.
Serve warm, garnished with fresh dill and, if you want, with grated cheese and a dollop of sour cream.
