Sugar free, fat free and yet these banana oatmeal muffins are incredible delicious and packed with flavor. These muffins are also very easy to prepare with a handful of healthy and natural ingredients.
Sugar is not so good for our health and I’m looking for sugar free recipes. These banana oatmeal muffins are a hit!
These super delicious muffins are perfect for breakfast, dessert or for an afternoon snack.
To prepare these healthy muffins, you should start by grounding the oats. Next, mash the bananas and combine all the ingredients.
Then spoon the batter into a slightly greased muffin tin and bake. I didn’t use paper muffin cups because they stick to muffins. It’s much better to spoon the batter directly into the slightly greased muffin tin.
Oh, I forgot! It’s very important to use overripe bananas! Bananas with brown spots are the best for this recipe. I also added raisins, for sweetness. Instead of raisins you may use other dried fruits (like dates or dried apricots) or 2 tablespoons of honey.
This is a quick and easy recipe, perfect for breakfast. A couple of banana oatmeal muffins and a cup of coffee (freshly squeezed orange juice for kids), this is a great way to start the day!
The recipe makes 12 muffins.
Ingredients for banana oatmeal muffins
– 160 gr (2 cups) old fashioned oats
– 2 overripe bananas
– 2 large eggs
– 240 ml (1 cup) yogurt
– 1 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda
– vanilla flavor
– a pinch of salt
– 60 gr (1/2 cup) raisins
– 1/2 teaspoon ground cinnamon
How to make banana oatmeal muffins
You should start by grounding the oats.
Place the oats into a blender and mix until they turn into a mixture similar to flour.
Use a bowl to combine ground oats, a pinch of salt, baking powder, baking soda and ground cinnamon. Set aside.
Use a blender or a stick mixer to mash the bananas. Set aside.
Crack the eggs into a large bowl and mix until foamy. Add yogurt, mashed bananas and vanilla flavor and mix to combine.
Add the ground oats (combined with a pinch of salt, baking powder, baking soda and cinnamon) and stir to incorporate.
Stir in the raisins.
Spoon the batter into a slightly greased muffin tin. Sprinkle some oats on top.
Place the banana oatmeal muffins into the preheated oven and bake at 190º C (374º F) for about 20-25 minutes (or until golden brown on top).
Remove from the oven and allow to rest into the muffin tin for 3-5 minutes then remove and allow to cool on wire racks.
These banana oatmeal muffins are great for breakfast, along with a glass of milk or freshly squeezed orange juice.
