Chocolate- checked. Vanilla pastry cream – checked. Fresh fruits, for vitamins – checked. These chocolate cups filled with vanilla pastry cream and fresh fruits are the perfect summer desert. They are super delicious and very easy to prepare with a few ingredients.
As regarding the fruits, my kids asked bananas and peaches but you can also use strawberries, pineapple, apricots, blueberries, raspberries or any other fruits you might like. In winter you may also use canned or frozen fruits.
Vanilla pastry cream is very easy to prepare. It needs to be cooked only for a few minutes and you don’t need any special skills or instruments.
But in summer time, when it’s very hot outside, you may replace vanilla pastry cream with vanilla ice cream (or with your favorite ice cream).
Now let me give you some tips about how to prepare the chocolate cups.
I recommend you to use silicone muffin cups. They work the best. Paper muffin cups may be used only if you don’t have silicone muffin cups and you have to use 2-3 for each chocolate cup. After the chocolate is firm you have to remove the silicone/paper cups. You must work quickly because the chocolate melts into your hands. I filled the chocolate cups and then I removed the silicone muffin cups but it’s not wrong to start by removing the silicone cups.
These chocolate cups filled with vanilla pastry cream and fruits are excellent for a family dinner but also for parties.
The recipe makes 8 chocolate cups.
Ingredients for the chocolate cups filled with vanilla pastry cream and fruits
– 200 gr (7.05 oz) dark chocolate
– fresh fruits (I used 2 small bananas and 1 peach)
You should start by preparing the vanilla pastry cream. See the full recipe here. Allow to completely cool.
Place the chocolate (pieces) into a heatproof bowl. Place the bowl on top of a pot filled half with water. Place the pot over medium heat and cook until the chocolate is completely melted.
Remove from heat.
Take 1 silicone muffin cup and coat the inside with melted chocolate. You may use a brush or a spoon.
Repeat with the remaining muffin cups.
Place the muffin cups into the refrigerator until the chocolate is firm.
Meanwhile chop the fruits into very small pieces. Stir the chopped fruits into the vanilla pastry cream.
Remove the chocolate cups from the refrigerator. Fill them up with the vanilla pastry cream and fruit mixture. Place the chocolate cups back into the refrigerator for 10-15 minutes.
To remove the silicone cups carefully pull down the edges and push the bottom. You have to work qucikly because the chocolate melts into your hands.
Place the chocolate cups onto a platter and top with fresh fruits.
Keep the chocolate muffin cups into the refrigerator until serving.
