These fritters are also very easy to prepare and you should start with the zucchini. The zucchini contain a huge amount of water and you should grate them, place them into a colander, sprinkle some salt and allow to rest for about 30 minutes to leave water. Then thoroughly squeeze the zucchini into your fist and combine with the rest if the ingredients. The mixture should be moist but workable. If the mixture is too moist and you can’t shape the fritters you may add flour and/or breadcrumbs until achieving the desired consistency.
I wanted a crispy crust for my fritters so I rolled them through breadcrumbs, then deep-fried them in hot oil.
These feta cheese zucchini fritters are awesome and you definitely have to try them. Even though you aren’t a zucchini fan :). The zucchini flavor is delicate and subtle and it goes great with feta cheese and dill.
