Juicy on the inside, crispy on the outside, packed with flavor and very easy to prepare, these feta cheese zucchini fritters are the best meat -free fritters!
These feta cheese zucchini fritters are absolutely delicious and you can serve them as a meal, along with your favorite salad, along with mashed potatoes or with rice.
Also these fritters may be served cold as a snack or as an appetizer.
And if you want to be creative, you may use these feta cheese fritters to prepare delicious burgers with fries, mayo, ketchup, salad and cheese. Mmmm, I’m already salivating :).
These fritters are also very easy to prepare and you should start with the zucchini. The zucchini contain a huge amount of water and you should grate them, place them into a colander, sprinkle some salt and allow to rest for about 30 minutes to leave water. Then thoroughly squeeze the zucchini into your fist and combine with the rest if the ingredients. The mixture should be moist but workable. If the mixture is too moist and you can’t shape the fritters you may add flour and/or breadcrumbs until achieving the desired consistency.
I wanted a crispy crust for my fritters so I rolled them through breadcrumbs, then deep-fried them in hot oil.

Ingredients for the feta cheese zucchini fritters.
– 800 gr (1.76 lbs) zucchini
– 200 gr (7.05 oz) feta cheese
– 3 eggs
– 3-4 tablespoons flour
– 3-4 tablespoons breadcrumbs
– 1 onion
– 1 bunch fresh dill
– salt and pepper to taste
You also need:
– breadcrumbs for shaping the fritters
– vegetable oil for frying
How to make feta cheese zucchini fritters
Rinse and grate the zucchini. Place grated zucchini into a colander, sprinkle some salt and allow to rest for about 20-30 minutes to leave water.
Then thoroughly squeeze the zucchini and place them into a large bowl. Add the eggs, grated feta cheese, finely grated and drained onion and chopped dill.
Season with salt and pepper and stir to combine.
Add flour and breadcrumbs (3-4 tablespoons of each) and stir to combine. If necessary add more flour and/or breadcrumbs, one spoon at a time, until achieving the desired consistency. The mixture should be moist but workable.
Take 1 tablespoonful of mixture and with your wet hands shape into a patty. Roll through breadcrumbs until the patty is evenly coated. Set aside.
Repeat until you finish the mixture.
Meanwhile heat the vegetable oil.
Fry the feta cheese zucchini fritters on both sides until golden brown.
Transfer to paper towels. Allow to cool for a few minutes.
Serve these delicious feta cheese zucchini fritters as a snack, as an appetizer or as a meal along with your favorite side dish.
