Soft, flavorful and coated with cocoa powder, chocolate sprinkles or nuts, these chocolate truffles make the perfect sweet treat. I’m a chocolate lover and I can tell you that this chocolate truffles recipe is a keeper. But be careful, you may become addicted! :).
These chocolate truffles are also easy to prepare with only 2 ingredients (dark chocolate and whipping/heavy cream) plus coating.
Although this recipe is very easy to prepare there are a few tricks.
You have to melt chocolate and whipping cream and allow to cool. The trick is to obtain a firm but workable mixture. If the mixture is to hard, you won’t be able to shape the chocolate truffles. On the other hand, if the mixture is fluid, it can’t be molded.
To obtain a firm but workable chocolate ganache I use 150 gr dark chocolate with 50% cocoa and 100 ml whipping cream.
When you shape the chocolate truffles you should work in batches because the chocolate ganache softens quickly at room temperature.
After you finish to shape all the chocolate truffles, chill them for a few minutes and then coat with cocoa powder and chocolate sprinkles.
Anyway, if you have doubts about the result, you may place the chocolate ganache into a pan lined with parchment paper or plastic wrap, chill then cut into squares and coat with your favorite topping.
As regarding the coating, I think that cocoa powder goes great with these chocolate truffles. You may also use chocolate or rainbow sprinkles, coconut, crushed nuts or whatever you might like.
I’ve made these chocolate truffles for my youngest son 6th anniversary and I thought he won’t like chocolate truffles coated with cocoa powder. So I coated some chocolate truffles with chocolate sprinkles. Kids love chocolate sprinkles, right?
Well, my kid liked more the cocoa powder coated truffles :). Excellent choice!

Ingredients for the chocolate truffles:
For the chocolate ganache:
– 150 gr (5.29 oz) dark chocolate (50%cocoa)
– 100 ml (1/3 cup 1 tablespoon and 1 teaspoon) whipping cream
For coating: cocoa powder, chocolate or rainbow sprinkles, crushed nuts
How to make the chocolate truffles
Finely chop the chocolate. Place it into a heatproof bowl. Add hot whipping cream and stir.
Cover and let sit until the chocolate is completely melted.
Transfer to a metallic cold biwl and refrigerate for about 3 hours.
Remove from the refrigerator.
Scoop about 1 tespooon of chocolate ganache and roll into a ball.
Work in batches because the chocolate ganache softens pretty fast. Roll 4-5 chocolate truffles, chill the chocolate ganache for a few minutes then continue to roll truffles.
Refrigerate the chocolate truffles for a few minutes.
Coat the truffles with cocoa powder or chocolate sprinkles (or use your favorite coating).
