Tender, vanilla flavored and absolutely delicious, these raisin cookies are my childhood favorite sweet treat.
These raisin cookies are very popular in Romania. Actually I think they are the most popular.
The reason is very simple: these raisin cookies are incredibly easy to prepare with a handful of affordable ingredients. And you don’t need any special instruments or skills :). All you need is a bowl and a hand mixer or a wooden spoon. And, of course, you need an oven to bake the cookies.
I remember that a few years ago I’ve made raisin cookies for a school Christmas party with super delicious cakes, pies, cookies and candies. My raisin cookies were a hit and they vanished within seconds :).
To prepare these delicious cookies you have to combine all the ingredients. If you don’t like raisins you can replace them with your favorite dried fruits and you can also add nuts. This recipe is pretty versatile and you can adjust it to your taste.
After you make the batter you have to refrigerate it for about 30 minutes. It will be easier to scoop the batter onto the baking tray. Also it’s very important to leave distance between cookies because they spread a lot into the oven. We don’t want to get one single giant cookie, right? :).
When you bake these delicious raisin cookies you have to keep an eye on the oven. These cookies are ready within minutes and you have to be careful to not burn them.
Once the raisin cookies are baked, let them sit a few minutes onto the parchment paper because they are very tender. After a few minutes you may transfer the cookies to cooling racks.
These raisin cookies make the perfect choice for parties and for holidays and you have to give them a try.
I love to have a couple of raisin cookies along with my morning coffee. Also they go great along with a glass of milk or freshly squeezed orange juice.
The recipe makes about 25-30 cookies.

Ingredients for the raisin cookies
– 150 gr (1 1/3 stick) soft butter
– 3 eggs
– 230 gr (2 cups minus 3 tablespoons) flour
– 150 gr (1 1/5 cups) powdered sugar
– 150 gr (1 cup) raisins
– a pinch of salt
– 1 tablespoon vanilla flavor
How to make raisin cookies
Place powdered sugar and soft butter into a large bowl. Mix until creamy.
Add the eggs, a pinch of salt and vanilla flavor and mix to combine.
Add flour and mix to incorporate.
Stir in the raisins.
Refrigerate the batter for about 30 minutes.
Drop the batter by teaspoonful onto the baking tray lined with parchment paper.
Bake at 200°C (392°F) for about 10 minutes (or until edges are nicely browned).
Let sit for a few minutes onto the parchment paper then transfer to cooling racks.
Repeat until you finish the batter.
Serve along with your morning coffee or along with a glass of milk.
