Hello, chocolate lovers! I have a wonderful recipe for you: chocolate cupcakes. Yummy! I have to tell you that I’m a chocolate lover myself and I’ve tested quite a few chocolate recipes. I mean I know what I’m talking about :). These chocolate cupcakes are a hit and you definitely have to give them a try!
These chocolate cupcakes are like tiny cakes and I feel like Alice in Wonderland when I eat them. They are so small, cute and super delicious! Soft and flaky cake, topped with a lot of chocolate ganache and some chocolate sprinkles…. Are you drooling? I am!
And the good part is that these chocolate cupcakes are also incredibly easy to prepare with a handful of ingredients. All you have to do is to combine all the ingredients, scoop the batter into muffin cups and bake. It’s quick and easy and you can use a whisk or a hand mixer with the same results.
Although this is an easy recipe, you have to respect 1 very important rule: the baking cups must be only halfway full! If you overfill the baking cups your cupcakes may overflow. Cupcakes rise spectacularly in the oven and halfway full baking cups are more than enough. If you have batter leftovers you may be tempted to overfill the baking cups. Don’t redistribute batter leftovers! If necessary, use a second muffin tin. This recipe makes 14 chocolate cupcakes and I used 2 muffin tins to bake them.
This was the tricky part. Oh, there’s another difficult part: you must allow cupcakes to completely cool before frosting them. Yes, I know, these chocolate cupcakes smells sooo goood and it’s quite difficult to control yourself. But you really have to wait because it’s not a good idea to frost hot cupcakes.
Once the cupcakes are completely cooled,you may frost them.
As regarding the frosting, I used chocolate ganache but you may also use chocolate buttercream or your favorite frosting.
My kids were excited about these chocolate cupcakes!

Ingredients for the chocolate cupcakes:
– 95 gr (3/4 cup) flour
– 42 gr (1/2 cup) cocoa powder
– 200 gr (1 cup) granulated sugar
– 80 ml (1/3 cup) vegetable oil
– 2 eggs
– 120 ml (1/2 cup) buttermilk
– 3/4 teaspoon baking powder
– 1/2 teaspoon baking soda
– a pinch of salt
– 1 tablespoon vanilla or rum essence
Frosting: 1 chocolate ganache
Optional: chocolate sprinkles
How to make chocolate cupcakes
Preheat the oven to 180°C (356°F).
Line a 12 cup muffin tin with baking cups. This recipe makes 14 chocolate cupcakes so you should also line a second muffin tin with 2 baking cups. Set aside.
Use a medium bowl to stir together flour, cocoa powder, a pinch of salt, baking powder and baking soda. Set aside.
Place granulated sugar and 2 eggs into a bowl. Mix until foam forms. Add the vanilla (or rum) essence and vegetable oil and mix to incorporate.
Add about 2/3 of the dry ingredients and mix to incorporate. Add the buttermilk and mix.
Add the remaining dry ingredients.
Spoon the batter into the baking cups.
Place the muffin tin into the preheated oven and bake at 180°C (356°F) for about 17-20 minutes (or until a toothpick inserted into the center of a cupcake comes out clean).
Allow to cool completely.
Frost the chocolate cupcakes and top with chocolate sprinkles.
