Cheesecake brownies (video recipe)

Brownies… Oh, I love them! Cheesecake… Mmmm, yummy! Cheesecake brownies… OMG, these are the best brownies!!! Dieting… what are you talking about???

These cheesecake brownies are so sinfully good, so good that you won’t be able to stop eating. There’s a rich, fudgy and super delicious brownie layer, the perfect sweet treat for any chocolate lover. There’s also a creamy and flavorful cheesecake layer to please all the cheesecake lovers.

Also these cheesecake brownies are so incredible easy to prepare from scratch with a handful of ingredients. There’s a one-bowl brownie recipe and a quick and easy cheesecake swirl.

To prepare the brownie batter you should start by melting the chocolate and the butter. For melting you may use the bain-marie method or the microwave oven.

If you choose the bain-marie method place the chocolate and the butter into a heatproof bowl.

Pour water into a pot, about halfway. The bowl with chocolate and butter shouldn’t touch the water.

Place the bowl on top of the pot.

Place the pot on the stove, over medium heat and cook, stirring occasionally,  until the chocolate and the butter are completely melted.

Allow to cool and incorporate the sugar, the eggs and the flour.

To prepare the cheesecake layer, mix the cream cheese and the sugar until creamy then add the egg and the vanilla essence.

You may also add nuts, raisins or chocolate chips.

Pour the brownie batter into the baking pan, spread the cream cheese mixture over the brownie layer and use a knife or a fork to swirl brownie batter and cheesecake together.

Allow the cheesecake brownies to cool completely before cutting. For a nice and clean cut you should refrigerate the brownies for a few hours.

Ingredients for cheesecake brownies (for a 27/17 cm – 11/7 inches baking pan)

For brownie

– 115 gr (1 stick) butter

– 230 gr (8 oz) dark chocolate

– 250 gr (1 1/4 cup) granulated sugar

– 3 eggs

– 95 gr (3/4 cup) flour

– a pinch of salt

– 1 tablespoon vanilla essence

For cheesecake

– 230 gr (8 oz) cream cheese

– 50 gr (1/4 cup) granulated sugar

– 1 egg

– 1 teaspoon vanilla essence

How to make cheesecake brownies

You should start by making the brownies

Place the chocolate and the butter into a heatproof bowl. Melt to the microwave or use the bain-marie method. For the bain-marie method see above.

Allow to cool to room temperature.

Add granulated sugar and mix to combine.

Add the eggs, one at a time, and mix to incorporate.

Add the vanilla essence and mix.

Stir in the flour combined with a pinch of salt.

Reserve 1/4 of batter (2 spoons). Set aside.

Next make the cheesecake swirl

Mix cream cheese and sugar until creamy. Add the egg and the vanilla essence and mix to incorporate.

Pour the brownie batter into a baking pan lined with parchment paper. 

Pour the cream cheese mixture over the brownie batter.Drop the reserved brownie batter over the cheesecake layer.Use a knife or a fork to create a swirl pattern.Bake at 180 °C (350°F) for about 30-35 minutes.Allow cheesecake brownies to cool completely then cut into pieces.
