Feta cheese rolls (video recipe)

Soft and flaky rolls stuffed with feta cheese, green onions and red bell pepper… Yummy! These savory rolls are incredibly tasty and pretty easy to make with a handful of ingredients.

These feta cheese rolls are amazing when they are still warm and if there will be any leftovers microwave the rolls before serving. These rolls are excellent for breakfast or as a snack along with a Greek yogurt or with a glass of milk.

To prepare these feta cheese rolls I used a dough made with flour, milk, vegetable oil and fresh yeast. This dough is rich and flavorful but not too heavy, is the perfect choice for soft and flaky rolls. It’s also easy to prepare and easy to roll out. There’s a few rules to respect though: knead the dough at least for 5 minutes and add more flour only if the dough is too sticky (difficult to detach from your hand). Also is very important to let the dough rise in warm place for about 45 minutes – 1 hour.

As regarding the stuffing, I used green onions and red bell pepper along with feta cheese. You may also add spinach, olives, dried tomatoes or whatever you might like.

Ingredients for feta cheese rolls

– 500 gr (4 cups) flour

– 25 gr (2 tablespoons) fresh yeast + 1 teaspoon sugar

– 1 teaspoon salt

– 250 ml lukewarm milk

– 2 egg yolks

– 30 ml (2 tablespoons) vegetable oil

For filling

– 400 gr (14.1 oz) feta cheese

– 4 green onions (1 cup)

– 1 small red bell pepper (3/4 cup)

Egg wash

– 1 egg yolk mixed with 1 tablespoon of milk or water

How to make feta cheese rolls

Stir together fresh yeast and 1 teaspoon of sugar. Stir until the yeast turns fluid. Set aside.

Use a large bowl to combine lukewarm milk, vegetable oil, salt and egg yolks. Stir in the fresh yeast.

Stir in the flour, gradually. When the dough becomes too thick to stir, continue to knead until the whole flour is incorporated. Continue to knead for about 5 minutes. You should obtain a smooth and elastic dough. If the dough is too sticky, you may add a little more flour (1-2 tablespoons).

Place the dough into a lightly greased bowl, cover with plastic wrap and allow to rise in warm place for about 45 minutes – 1 hour.

Place the dough onto the lightly floured working surface. Using a rolling pin, roll out the dough into a 45/30 cm (17.71/11.81) rectangle.

Evenly spread grated feta cheese, sliced green onions and chopped red bell pepper.

Roll tight into a log. Slice into 12 pieces.

Place the rolls into the baking pan, cover with plastic wrap and allow to rest for about 20-30 minutes.

Brush with egg wash and place the baking pan into the preheated oven and bake at 190ºC (374 ºF) for about 20-25 minutes, or until golden brown.

Serve warm along with a Greek yogurt.
