Angel food cake is very similar to sponge cake. The difference between the two cakes is that sponge cake is made with eggs, flour and sugar while angel food cake is made with egg whites, flour and sugar. I also added vegetable oil, for extra moisture.

This recipe doesn’t call for any raising agent. For a fluffy and super light angel food cake is very important to mix the egg whites properly. Also is very important to use clean instruments.
You should mix the egg whites in 2 steps. First you mix the egg whites along with a pinch of salt until fluffy. Then add the sugar and continue to mix until the sugar is completely dissolved. You should obtain a firm and shiny meringue.

Ingredients for apple and raisin angel food cake
– 6 egg whites (250 gr/ 8.81 oz)
– 200 gr (1 cup) granulated sugar
– 125 gr (1 cup) flour
– 120 ml (1/2 cup minus 1 tablespoon) vegetable oil
– 2 apples (300 gr/ 10.5 oz)
– 70 gr (2.46 oz) raisins
– a pinch of salt
– vanilla essence
– 1/3 teaspoon ground cinnamon
How to make apple and raisin angel food cake
You should start by preparing the apples.
Rinse and dice the apples. Place the diced apples into a pan along with 2 tablespoons of sugar. Place the pan over medium heat and cook, stirring often, until the juices are evaporated. Remove from heat, stir in the ground cinnamon and allow to cool completely.
Place the egg whites into a large mixing bowl. Add a pinch of salt and mix on high speed until fluffy.
Add the sugar in 2-3 steps and mix until the sugar is completely dissolved. You should obtain a firm and shiny meringue.
Add the vanilla essence and the vegetable oil and mix to incorporate.
Stir in the flour, gradually. Use a spatula to incorporate the flour.
Stir in the apples and the raisins.
Pour the batter into the loaf pan lined with parchment paper.
Place the cake into the preheated oven and bake at 170ºC (338ºF) for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
Allow to rest into the loaf pan for about 5 minutes then transfer to wire racks.
Serve with a dust of sugar or topped with your favorite frosting.
